It is very important to follow the instructions in the manual to get knifes sharpened as blades. I am not exaggerating: At the beginning, my wife (with a cut in her finger) claimed that knifes were dangerously sharpened, so I separated one that I don't sharp anymore. The rest of them, are maintained sharpened as blades, for my own use.

Some of my knives had a very dull blade, so a new edge was required. This sharpener has a coarse wheel, which quickly puts a new edge on the blade, and removes the small dings I had on some blades.

Typically, you will only need the fine wheel, and the final 'buffer' wheel to keep your knives sharp.

The only reason I did not give (...) is you have to be careful not to press too hard or you will cut into the plastic guide slots. I did this the first few times I used the sharpener, but learned how to control the pressure. This sharpener does not need more than 2 passes on each wheel, per knife, and the directions are just guidelines. After you sharpen a few knives, you will get a feel on how much of which wheel you will need. Just be aware that different pressure will be needed on different knives, with thicker blades needing more pressure to fit in the spring loaded guides.

Again, the first coarse wheel is rarely used, except for extremely dull or damaged (nicked) blades. This unit is so easy to use and lightweight, that it is not an inconvenience to touch up your knives quite often.

You cannot go wrong by purchasing and using this sharpener. I have used it on Heinkels, Cut-co, Ito Chef, and on my cheap knives. I sharpened all my Benchmade, Buck, Kershaw,and Cold Steel pocket knives as well. Spyderco serrated knives are tough on the buffer wheel, so I would not recommend using this on extreme serrations, those found on Spyderco knives.

Although the 'buffer' wheel is recommended for serrated blades, I found some serrated blades will cut into this leather-like material, decreasing wheel life. Since I don't know if there are wheels that are available for easy replacement, I would not recommend using it on serrated blades often. For straight edge knives, this is the best solution I have found. I have purchased Lansky sharpeners, Spyderco sharpeners, and regular whet stone sharpeners. This sharpener costs more, but is very reliable and produces the sharpest blade ever. It is much easier, and much faster.

I am sure a pro or a trained whet stone user can sharpen a blade better, but for the person who is not a professional knife sharpener, this is your best bet. I can sharpen a knife perfectly in under a minute.

I have seen 2 stage sharpeners made by Chef's Choice in some stores, but I would suggest the 3 stage for most people. It is always good to have the coarse wheel for dull, damaged blades.

I have bought two of these models (120), and gave one away as a gift. There is a newer model, which is different, so I stuck with the model that has been proven to be a winner.

I have had this model for a few years and have sharpened many knives using it. They all pass the "paper" test where you can slice a free hanging piece of paper with no tears or catches. But to make this work, almost every one of the knives had to go through numerous passes on the first wheel. You must be able to feel the burr along the entire length of the blade in the number one slot before moving on to two and three. Once you have reset the sharpening angle of the blade in number one, you should never have to go back to that wheel again (unless you are trying to cut metal). Be patient on really dull knives. They may take five minutes or more on the first wheel. Then it's just three to five passes (each side) on the last two. I know the 110 does not have this coarse wheel. I do not know about the 130.

We had the first generation of Chef's Choice sharpeners, and it's been sitting in a cabinet for at least 15 years. It wasn't as good as a steel (and it cost more than what we paid for the 120). So while I was reluctant, I took a chance and bought the 120. We have an assortment of Henckles, Wustoff, and 45 year-old Zylco knives. We have serrated, hollow ground, and straight edge. All I can say is that, having now sharpened all, our greatest fear is the loss of a finger.

Even the Zylco which are truly 45 years old are as sharp as the day we bought them. A 40 year old Henckle hollow ground carving knife just sliced through a standing rib roast like it was butter. [For what we paid for the roast, it should have.]

Even steak knives have been brought back to life.

A not so secret secret is that we used Stage 2 on a serrated knife. It was the only way it would ever be sharp again. If Microsoft had made this sharpener, it would have calld it "an illegal practice," but it was either give that a shot or throw the knife away. It worked, and worked well. It's a bread knife that can now slice through bread in 1/4" slices with no effort or tearing.

I cannot vouch for the two stage sharpener, but you have to remember that it was the first generation sharpener. But I can heartily recommend the 120 3-Stage.

This is a great product. It is the first electric sharpener I've purchased, and I am pleased with it's performance. In regards to a previous reviewers comments about scratching the blade, I think I know the solution. Personally, the scratches mean little to me if I have a razor sharp knife in trade, but for those of you who want to retain the looks of your knives, read on. The cratching, for me, only appeared on a knife that was very dull that I had to use the roughest stage on 2-3 times. What I believe happened to cause the scratches was that this stage removes so much metal and in such large pieces that they inevitably get on the plastic guards that keep the blade in the correct angle. When you reinsert the blade for another pass, these particles scratch the blade. I didn't notice such scratching on the other knives and they only required the finer stages of sharpening, therefore the particles where less and smaller. I suggest if using the rough stage, wipe off your knife after each pass and slide a cloth down between the plastic guard as well. Some light scratching may even polish out with a metal polish such as Flitz.

This little 'gadget' will transmogrify the dullest, bluntest knives in your drawer into razor sharp slicers and dicers. I didn't believe it really could; I bought it because I was ready to try anything cleaner than oil and stones - even my diamond hone could not refurbish abused blades to my satisfaction.

This machine fixes the problems of those ratty sharpeners on the backs of can openers, the messy and oily hones, the ineffective and tiring ceramic 'V' contraptions - and the user errors. The slots align the blade to the correct angle and keep it that way - the user just stabilizes the knife handle and keeps the blade from running through too quickly. It is that easy!

The stages run from coarse grit (for horribly dull blades that you used to cut branches in the garden last summer) to extra fine (to finish the edge or re-align the blade edge after use). Even my cleaver is sharp enough to cut joints instead of bludgeoning the entire beast into submission. Best of all, it sharpens quickly; it is no longer a messy, all day chore to get sharp knives.

I have been wanting an electric sharpener but didn't want to spend the money on one if I wasn't confident that it would work. I have spent too much money on devices that don't work.
On one of the threads of a fishing forum that I participate in, there was a discussion about the Chef's Choice. There were several participants on the forum that claim to be knife experts and collectors. Most of them said that they could get a better edge on a knife with a stone, but many said that they use the Chef's Choice for their everyday knives and boat knives and that the device does a very good job.
That was enough to sell me on trying one. I ordered the model 120 from Amazon.com that day. It was less than $100 including shipping.
The sharpener arrived in less than a week. I read the instructions and sharpened 10 knives in less than 30 minutes. On the first 2 or 3 knives, I would use a maginifying glass to look at the edge after each step. I was amazed at how well it worked.
I was able to shave the hair from my arm with one of the blades.
Highly recommended.
I wonder if it will work on my fishing hooks?

I purchased this item based on the recommendation in Cook's Illustrated, and although it did sort of sharpen the blade, it also scratched the knife unevenly roughly 3/4" above the blade edge. In my case, this means I now have a cosmetically damaged -- albeit slightly sharper -- very expensive Wusthoff knife.

And I will note that this is after extremely careful reading and following of the directions -- specifically because I wanted to avoid any damage to the knife.

Yes, the knife is slightly sharper, but it's now ugly. Not a huge deal, but either my specific sharpener is defective, or this is a flawed product. Either way, don't risk it if you value your knives cosmetically.

After debating to either get the Chef's Choice or the Furi Sharpening System, I decided to spend the extra $30 and go with (what seems to be) the gold standard of home knife sharpening. This is, like what has been stated in all of the rest of the reviews, is a nearly perfect device. It is easy to use out of the box. It sharpened my expensive Henckels and Wusthof knives back to their original sharpness. Then it sharpened our old cheap Henckel's chef's knife to almost the same sharpness as the expensive ones. I would not hesitate to buy this sharpener if you have expensive knives that you want to keep sharp and to keep your investment on.

I've read all the reviews and agree with the ones rating this unit highly. I've owned two Japenese restaurants for 5 years. I actually use the series 2000 professional at the stores and this one at home. I've noticed while watching employees trying to get the hang of it, that some people just don't get it. They push very hard down on the knife cutting all the way through the blade rest within weeks. Some complain of too weak of a motor as it won't resist the force as they lean on it. If one learns to gently twist the knife into the blade sideways and refrain from the destructive down force, it works beautifully. After all the blade is either being ground on one side or the other, not directly on the edge. Heavy handed hacks will never be able to produce a VERY sharp edge which this sharpener is capable of. As the blade gets sharp, one learns to go lighter on the final strokes. My experience is that the degree of finesse you have will determine how extremely sharp you can get it. I certainly can hold up a sheet of paper with one hand and cut through it with the knife without tearing or folding the paper. I've never owned professional knives that were much sharper when new.

I've had this sharpener for about three years now and am still very pleased with it. It has kept my Wusthof knives very sharp and pleasant to use without wearing them down noticeably. I'm an enthusiastic home cook, but have no skills with a stone and steel, nor do I have much interest in learning to use them. Yes, you have to read the instructions carefully, but this is far easier to learn than manual knife sharpening techniques and does a very nice job.

I can't speak to the level of sharpness I've achieved as opposed to the professional sharpening results others have described. I've never tried to use my kitchen knives to shave of my arm hairs or slice through a paper bag, but they do cut easily through a ripe tomato without denting the skin, so I'm quite satisfied.

I've only used this on about 10 knives including 2 fish filet knives; however, it worked great. It took a few minutes to get the hang of it, then I easily sharpened the knives in about 20-30 minutes. I used paper towels before and after to determine sharpness--simply place the towel on a cutting board and, with moderate force, cut the paper. A dull knife will snag the paper and generally do a poor job of cutting.

I've had my 120 sharpener since December 2001. It has put an edge on everything I have thrown at it. It is great for utility knives and kitchen knives. You don't want to use this on heirloom or collector blades that you want to keep a mirror finish on.
It is easy and quick.
I am sending mine in to be refurbished at a modest cost. The only thing wrong with it is the blade stop is cut through and I think it affects the angle of grind. Plus the grind marks ride much higher on the blade because of the increased depth of the blade.
THis is a great sharpener. It is also the only electric sharpener recommended by sharpening gurus

This is a fantastic sharpener!! But it is a bit expensive. I sharpened all my knives and they have remained sharp for months now. so that comes out to about $20 per knife. I do a minimal to moderate amount of cooking so this may have been a little overkill for my situation. If you do alot of cooking this is a must have. otherwise get it on ebay. I see a few right now on ebay for $40-70

I initially purchased a model 100 from a local Target store. It looked identical to the model 110 that is listed on Amazon's site. After bringing it home and trying it, I discovered that it did not sharpen the knife all the way to the hilt. After calling the 800 number for Chef's Choice, I found out that the 100 is different from the model 110 because of the inability to sharpen the full length of the blade. Both the 100 and the 110 use reciprocating flat stones to do the sharpening. I found that the model 100 had a tendency to leave irregular sharpening marks on the knife, They were sharp - but purely on an aesthetic view - they didn't look that good after sharpening. I then opted to go for the Model 120.

The Model 120 uses three sets of rotary stones that are controlled by springs that keep a constant pressure between the blade and the knife. It also has spring loaded slots that keep the knife at an exact grinding angle. It is an almost foolproof method of sharpening knives. As long as you maintain an even speed pulling the knife through the sharpener and you allow the spring to hold the knife at the proper angle, you should get the same excellent results that I got. The first stage only has to be used the first time that you sharpen a knife with the unit - after that only stage two and three should be necessary.

One of my concerns about using an electric knife sharpener has always been about how much steel is removed from the blade during sharpening. The model 120 has a magnetic cleanout plug under the machine that collects the steel removed during the sharpening process. After sharpening eight knives the filings that accumulated on the magnet were almost non-existent.

I have always been reluctant to try an electric knife sharpener on our Henkels Four Star knives. We have had the knives for over twenty five years and the only sharpening that they have ever seen has been with the Henkel's fixed wheel pull through sharpener and steel along with an occasional "tune-up" by a professional knife sharpener. After using the Chef's Choice the edges of the knives are a good as the day they were purchased.

I studied all the reviews, mostly raves, about this sharpener before ordering. I did notice a couple of negative comments by a professional chef and others, but hoped their experiences were not accurate. In fact the claims that this sharpener produces a razor edge are quite unfounded from all I can tell. I carefully read the instructions, obtained a burr as required, honed the blade many times for extra sharpness as described, etc. Knives did become sharper, but nothing close to really sharp as one would like for cooking. Cutting a paper bag edge required dragging the blade, not simply letting it fall into the paper, as a truly sharp knife should do.

I have been to Japan and observed the standard for sharpness there: a blade should cut the hairs on your arm without touching the skin. This machine does not begin to approach that realm. Instead it appears to depend for its success on low consumer expectations. Is hand sharpening on a wetstone the only answer?! Be prepared for disappointment, sorry to say. I returned mine the day after it arrived.

After reading all of the reviews for this item I thought I would give it a try. I am glad I did.

I did not have any of the problems that the people who gave poor reviews had, I attribute this mostly to reading the instructions and practicing with a knife that was already ruined.

I also have to disagree with many of the positive reviewers as well. This is a great sharpener, but it does not do nearly a good enough job to replicate the edge on my Wusthof's when they were new. It also does not come close to the quality of edge you get when having your knives sharpened by a professional.

As a do-it-yourself sharpener goes, I truely believe this one is the best. But please dont let yourself be fooled into believing it will duplicate factory sharpness or be putting the professional knife sharpeners out of business any time soon.

I am very glad I bought this, it is very handy and I use it frequently. It has greatly prolonged the length of time between having my knives professionally sharpened, but not eliminated the need for it.

I have a set of Wusthof blades (nice ones!)I'd gotten 12 years ago for my wedding. They had NEVER been sharpened (pure laziness on my part) and they were so dull they couldn't cut butter. Pathetic. I purchased the Chef's Choice 120 with high hopes. As suggested by other reviewers, I READ THE MANUAL CAREFULLY. It is pretty straightforward, but there are important things to know. Due to the extreme dullness of my blades, I had to go through the sharpening process for each one twice, but they all came out wicked-sharp! I am really, really pleased with this sharpener. I'm not a professional cook, just a person who LIKES to cook and uses knives often. The process is easy to follow and works beautifully. My Wusthof knives are back in action! Well worth the cost and I can touch them up whenever I need to without having to send them out to be sharpened--which I never did anyway.

I am not a chef, although I love to cook outdoors. I made a big investment in a set of Henckels and since I'm not so hot with the steel, I thought is would be good to get this sharpener. I find that the last stage is excellent for keeping the edge honed and makes the steel redundant.

I also passed my fishing knife and hunting knife through this sharpener, all with great results. I recommend the 3-stage version even though I only use the first stage to repair badly damaged edges.

I had purchased a Sabatier knife sharpener some years ago, recommmended by a Bloomie's salesperson/ knife aficionado. The unit had one slot, and kept a reasonable, but not great, edge on my Henckel knives. When I finally mangled my Henckel serrated bread knife to a completely dull edge with that sharpener (silly me), I had a dilemma. My current knives needed sharpening, and I wasn't getting the results I wanted with the Sabatier. I wasn't about to buy a whole new set of knives, either. I read some of the reviews here, and decided to take the plunge with the Chef's Choice. Good move!

The sharpener took my dull knives and brought them back to life, as I would have hoped. My 8" Chef's knife is sharper than when I first got it. I have to be extremely mindful when using it now, as it can slice carrots and lop off a finger with ease.

My serrated bread and tomato knives, which had less cutting ability than a butter knife, are much better after numerous passes through the serrated blade slot. While not what they once were (I have myself to blame, using my old sharpener on both standard and serrated blades), they at least provide some service now, versus none before. I am happy to report that the three-stage process in this model has the separate slot for serrated knives, which is great.

One could argue a moderate set of knives is less expensive than buying this sharpener. However, if you believe it better to use what the pros use, and have invested in world-class knives, as I have, then this sharpener will keep them honed to an edge you will appreciate.

You obviously haven't a clue what you are talking about. I own two of these, an industrial version for my restaurant and this model for home. The industrial version makes very quick and sanitary work on the 40 some odd knives we invariably have to sharpen. They both do almost as good of a job as I can but in a lot less time. I paid $400 for it (the commercial 2000 version) and it has saved me much, much more than that in both time (for those times I sharpened them myself) and money (for those times I sent them out).

This particular model I have at home (in fact I just ordered another for a friend), and it is a godsend when it comes to removing that particular chore from my life. It doesn't get them quite as sharp as I can get them, but they get closer with every update. The only knives I don't use this for are my many japanese knives especially those with a single bevel edge (such as my usuba knife) and my boning knives (the machine just can't get at the tight angle near the bolster, and I like that to be sharp, funny enough automotive sandpaper stuck to a mouse pad is the best sharpener I can find for that job). The vast majority of culinary professionals will send their knives out to be sharpened, as they don't have the time to waste on sharpenening knives.

Wusthof recommends this particular sharpener for use on it's knives, so there goes that theory.

Oh, and I didn't go to culinary school I studied in France, Italy and Japan in various 3 and 4 star restaurants.

So, in summary, stop trying to insult everybody while trying to elevate yourself, you aren't special, and learn what you are talking about BEFORE you rate something.

While most home "sharpeners" merely hone your knives, this product actually crafts a new, razor sharp edge on your knives. The term "sharpener" is a misnomer applied to many gadgets which are, in reality, only honers. Having fallen prey to this bit of deception myself (over the years, I have purchased ceramic rods, grinding wheels, carbide shapeners and a product called The Chantry), I am very pleased to have finally found this no-nonsense , genuine sharpener. I have used this product with "factory new" results on all of my Wusthof-Trident Culinar knives. And contrary to statements posted by another reviewer, this sharpener is in fact recommended by Wusthof-Trident for use on their knives--please refer to their "Comprehensive Guide On Honing and Sharpening" available on their website. One word of caution, though; this product is designed to sharpen knives with approximately a 20 degree cutting edge. Knives with cutting edges less than 20 degrees (i.e., Japanese knives) are probably not suited for this sharpener. Altogether, I highly recommend this product.

I had some trepedations buying this sharpener. I had purchased the 110, a 3-stage sharpener from Chef's Choice some years ago. Had those lousy metal bars in the grooves that kept getting stuck occasionally. But my wife is very hard on knifes. She rarely hones them with the steel, and for the occasional times I cook, it drives me crazy to use dull knives. I appreciate a good quality knife, and collect pocket knives, so getting cheap knives and replacing them frequently was not an option for me. I bought this unit because I don't have the time to manually sharpen over a dozen different types of knives we use.

Wow, what a great sharpener! While the results I got on the 110 were inconsistent, and I had to resharpen after testing, the 120 sharpened knives consistently sharp every time. The real test came when I had to sharpen the carving knife to cut the Thanksgiving turkey. I like to slice the breast meat thin, and it's a good sign of how sharp the knife is. Got thin slices quickly with minimum effort. I would have rated the 110 2-3 stars, but this unit deserves the 5 I'm giving it. And while it's easy enough for my wife to use, I still sharpen the knives because she just doesn't bother to care for them. Now if I could only find something to take care of that....

If you have invested in a good set of knives - do yourself a very big favor and invest in a quality knife sharpener. I wish I had purchased this months ago - it is a bit expensive but worth every penny. Don't mess with manual sharperners - to many chances for a mistake that can ruin a quality knife. One thing to mention if you buy this - READ THE MANUAL - that's a must. There are different wheels (for sharpening) based on how you will use your knives - if you read the manual and do exactly what it says, you can't go wrong.

I've been looking for a good knife sharpener for my parents, ever since I purchased their first pair of classis Wusthof knives. I've read about the Chef's Choice in Consumer Reports, the Google BBS rooms, and all the reviews on Amazon and Epinions. So I took the plunge and ordered it.

3 days after ordering (thanks for switching to UPS Amazon!) I received it, and was quite pleasantly surprised. While some people have complained about the sharpener leaving a mark on their nice Wusthof/Henckels knives, I found this to be not a problem. Yes, it does leave a mark on your knives, but the mark is barely half a millimeter tall, and hardly visible. It's a small tradeoff to make to get wickedly sharp knives without having to go to a professional to get it sharpened at several bucks/inch; it will pay off in the long run.

As for the people who have had problems sharpening their knives, well no offense, but you'd have to be blind, and/or a moron to not know how. The instructions are written plainly and clearly, and easy to follow, with advanced tips for specific types of foods.

I do have one question- Chef's Choice manufactures a cheaper 3-stage sharpener, I wonder how good that one is. Probably not diamond coated though.

Well, all in all, an excellent buy. The machine looks sturdy and strong, and it's such a relief to have a home sharpening kit. I could never properly sharpen with a whetstone and spindle-thingy.

I just bought this one today 3/04. Immedietly, I pulled out all my dull knives, as suggested try it out on your cheap knives. I have 3 asian cleavers one cheap knife and 2 good ones henkels. My husband start to sharpen the knives, He was enjoying it doing the job. After a few minutes, you can tell the difference. I was debating before of getting wusthoff grand prix trident knives, but I want to try this one out first since, they were so many good reviews. It was a breeze slicing the frozen meat again. I got this at $129.99 plus 20% at bed bath and beyond. SO I paid around $112 including tax. I can wait on those wusthof for the next few months, but right now, I am happy to get this. I was very suspicious of this guy, but having actually used it I can only recommend it.

We've had one in my house for quite some time. My mother bought it because she is not interested in learning the ins and outs of knife maintenance and read several great reviews of the 120.

I was suspicious, mainly from bad experience with cheezy knife sharpening gadgets, but also because my mom's knives, which had been through the Chef's Choice, always had crappy edges. I had made something of a habit of looking sideways at the Chef's Choice 120 on our kitchen counter.

I finally read one too many good reviews of this product (when I wasn't even looking for them, they just seem to pop up here and there if you read enough about cooking and cutlery), I decided to give it a shot on a Henckel's 5-star Santoku that had lost it's edge. I love the size and shape of a santoku, but it had gotten dull and was superceded by a Kasumi chef's knife I received as a gift. I figured the worst thing that could happen was that a knife I wasn't using would remain unusable.

First off, I Read The Freakin Manual. Do not underestimate the importance of this step. If I had just bought it based on good reviews and ripped open the box, I might have done this, but since I was already suspicious of it, I read through every word of their instructions. If you don't read the manual, the way you assume it works may be wrong (the big mistake might actually be overusing it). More on that later.

Next, before I turned it on, I did a few practice pulls with the power off. Get a feel for pulling the knife through smoothly and evenly. Make sure you keep the knife blade properly aligned with the wheel (i.e. if the knife you're sharpening has a curve, pull in a curve to keep proper contact with the sharpening wheels). Look at a clock, and make sure you're pulling at roughly the speed recommended for your knife's length.

Once I thought I knew how to use it, I made one pull through each side of stage 1. Felt the blade, as per the manual, and I had the burr they said I should feel for. Cool, it seemed to be working. I would recommend doing the burr check, because it does tell you that things are going according to plan. The same test is performed when knife sharpening is done by hand with a stone. After that, one pull on each side in the number 2 slot. Again, I had a burr, things seemed to be going well. Then I made 3 pairs of passes through stage 3, doing the left then right side, as recommended in the manual. Did a cutting test on some veggies. Wow, that thing was SHARP. Definately a better edge than you get from the factory on say, Henckle's or Wusthof's knives. I think my Shun and Kasumi knives were as sharp or sharper from the factory, but this was a nice, sharp, effortless, smooth-cutting edge, and it was equally sharp along the whole length. It's theoretically possible to get a sharper edge, but practically there is nothing left to desire from the edges I get from the Chef's choice, and I will happily be putting that knife back to regular use.

I asked my mom to have a go with the knife, and she was amazed at the edge I got from the same device she'd been using on her knives. It turns out she wasn't using it as recommended by the instructions. For example, she was making multiple pulls on the same side of the knife (you're supposed to alternate, left and then right side), and probably making altogether too many passes.

I redid the crappy edges on my mom's knives, and now they are just awesome. I do feel like I got slightly better results the second and third time I used the machine. Splitting hairs, but it's safe to say it gets better as you get the hang of it. As other reviewers have said, the best thing would be to practice on something inexpensive or throw-away to be absolutely safe. I didn't really have anything that fit that bill, so I just jumped in with a good knife.

So, bottom line is this sharpener can do a very good job, but it's a tool. Like any tool, it needs to be used properly. It may be electric, and it may be a lot easier and faster than a whetstone, but it doesn't have a brain. That's what you're for, so read the manual, make some practice pulls with the power off, sharpen a cheap knife first if you can, and then enjoy. Don't worry about a reviewer who says the thing jams if you try to push the knife against the wheels and thus doesn't sharpen the knife. The manual says not to do that, just use enough pressure to make contact with the wheels. My mom also didn't read the manual carefully, and didn't get very good results. I followed the manual, I got awesome results, and anyone else should be able to do the same.

I normally use a diamond-impregnated stone followed up by a touch of the steel to sharpen knives. I have to pull the blade down at the right angle, and move it in a sort of "j" motion to get the tip of the longer chef knives properly worked.

But if you don't have time or aren't willing to learn this technique, the Chef sharpener works very well. But it is not a matter of slap-and-go. You still have to learn to hold the knife at the right angle in the device and how to hold it properly so it doesn't "chatter" or jiggle in the sharpening wheels. This takes a tad of practice. However, once you get it, it's fast and you end up with very sharp knives.

This electric knife sharpener is so effective and easy to use, it's almost completely "automatic". Virtually anyone from teenager to age 99 can master the instructed technique quickly. Read the manual carefully, and re-read at the next use if you don't use it often. It is essential to remember and follow the recommended procedures for sharpening, and it can do everything: from a totally dulled knife-edge, whipping a semi-sharp blade into like-new shape, or even frequent maintenance of knives that see heavy action. It can even correct tiny knicks in the blade edge, and freshen-up the finish on a serrated edge. I used to borrow my Dad's Chef's Choice 3-Stage Sharpener, and it was terrific at keeping even the most inexpensive of my stainless steel knives in perfect cutting condition. I finally broke-down and bought my own when I invested in a full set of Wüsthof Classic, and it is money well spent, I can tell you!

This is pretty moderately priced and is very easy to use. It does a great job sharpening knives. I haven't tried cutting a copper pipe in half and then seeing if the same knife can then dice a tomato a minute later, but the knives are sharp after I use it. This device DOES sharpen knives like a professional sharpener would. It takes a little practice to sharpen knives using this machine. Yes, a little practice, but NOT a lot of practice. I suggest using cheap knives to practice with until you are comfortable enough to sharpen your good knives. I was not disappointed in this item and highly recommend it. Knives come our razor sharp. Plus the different stages allow you to vary the type of edge you like. Great item. But remember, a little practice goes a long way with this.

This does an outstanding job of sharpening straight-edged knives. On most of the knives that I sharpened, I could hold a sheet of notebook paper up with one hand and slice off strips not much bigger than a hair from the side of it with newly sharpened knives of all shapes and sizes. Before sharpening the same knives would only tear the paper if I started it on the top of the sheet.

The same test did not work with serrated knives, so I couldn't see where I made any real difference with them. I'd suggest that if you have this sharpener, that you discard most of your serrated knives, unless you want to use them like a saw.

It's great to have sharp knives and this makes it really quick and easy to have them.

I was going to order a new expensive set of kitchen cutlery, but with this our old cheap knives work just fine. I've also used it to sharpen knives for our family and friends.

There seems to be almost no price competition on these. I got the best deal by special ordering it from our local hardware.

I've used several sharpeners (including some of the Chef's Choice "vibrating" ones), and this is a real sharpener. It has rotating diamond disks that grind quick and accurate. I was almost able to get my set of junk Farberware Millenium knives to cut acceptably, but I think they need a bench grinder. But all the quality knives I own turned out incredibly sharp.

The motor is incredably weak so it is jammed and stops is any pressure is applied to the blade. As a result, very little sharpening takes place. The weight of the knife, less the tesion put on by the magnet, results in a very light touch of the hone.
Eventually, one of the hones fell off the plastic holder it was glued to so I threw it away.

I have several nice Sabatier kitchen knives that were dull from years of use and abuse. I tried a manual ceramic disc sharpener from Wusthof but only managed to completely destroy the edge on one of the knives. There are several pages on the internet which have good discussions on knife sharpening. Many of the pages mentioned the Chefs Choice sharpener (note most of them mention the 110 or the professional model). Since I felt that I would not be able to use a whetstone or one of the angled rod systems I went for this sharpener.

After practicing on a couple of "junk" knives, I used the sharpener on my Sabatier knives. Since my Sabatier knives were extremely dull, I used all 3 stages. After a few test cuts, I concluded that my Sabatier knives were at least as sharp as my brand new F. Dick knives. I also ran my serrated Sabatier steak knives through stage 3. As with other reviewers, I'm not sure whether there was any improvement or not.

To sum it up, the Chefs Choice Edge Select 120 is easy to use and allows an average person to put a very sharp edge on a straight edge knife. I would recommend that you practice with some knives that you don't care about first. You need to pull the knife slowly and smoothly through the sharpener to get good results. I definitely saw my results improve as I progressed through my knife collection.

Above all else read the directions & make sure your knives are clean before you sharpen them. This machine is fast, easy, & can put a variety of different edges on a blade. Although it's very simple to use, you need to read the directions to get the most out of it. I work in high volume carving stations and use the Chef's Choice 3-Stage after work every night to resurface the edges of my Henckels 5-star 10" Granton Roast Slicer & 5-star 5 1/2" Boning knife, then use a Henckels 12" diamond steel to keep them trued up throughout the night. Each set of disks are at different angles & courseness and consistantly put a quality edge on a blade. I get better, more consistant results w/this machine than by using a diamond stone by hand, & it's a helluva lot faster & easier. It's very efficent as well as it only removes as much metal as necisarry as long as you follow the directions. It even works on clevers. For home use it's the best sharpener I've found so far.

I have had mine for 3 months and it's greatest item I've bought. I sharpened old knives that I had put in the back of drawers becuase they were so dull from other hand sharpeners.

Now, it brought to life all my knives and even the serrated knives and the cleaver. My husband is a charter captain, he fillets large salmon and trout that his customers caught He uses the electric serrated knife and had been sending them in to be sharpen, but found buying new blades was cheaper. So, I gave it a try and sharpened 3 sets that were dull. He's amazed how well it cuts now. Use the last slot for serrated edges.

The three stage strategy works very well. I've used many non-powered techniques over the years with mixed success. Rods, stones, gizmos... Most work fine under limited circumstances, but all fall short in either the time and effort involved or their ability to do a particular stage of the sharpening.

I have a mixed bag of knives, ranging from Chef's Choice trizor and Sabatier au carbone to no-name stamped junk. Of course, this sharpener had no problem bringing them back to an extremely fine edge, but the interesting thing to me, was how differently these knives progress through the different stages of the sharpening. This may account for some of the different sounding reviews here.

The manual has good tips, read it!

I also have a knife that has primarily been used for construction tasks including sheet metal, sheet rock and digging. Needless to say, this knife was a mess. The 1st stage of the sharpener reshaped the edge in no time.

Once your knives are in good shape, it takes very little time to touch them up with the last two stages. Stage 3 is for straightening and polishing the blade, and stage 2 is a very light sharpening. Someone else here mentioned using a steel between sharpenings which is always a good idea. It's also a lot quicker/easier to pull out and put away, and for some softer knives, I think I get a somewhat sharper edge. (BTW this is an F. Dick 12" fine oval steel)

There was also a comment about not having much success with serrated knives that I have to echo. It can help true an already sharp edge but it can't sharpen a dull serrated blade.

Overall, I've had great results. Both in the quality of the edge it produces and the ease of use.

I bought this sharpener because I could never get my knoves truly sharp with a standard steel. This sharpener works wonderfully. The triple angle edge looks rough, but is actually quite sharp. I use the finest grit frequently on my knives, every 2nd or 3rd use. I cannot say how this would work on low quality knives, I use it on Henckels, Wusthof and F Dick.

If you're a professional, you may not like the edge profile. I have a fine grit water wheel that I use in the woodshop to sharpen woodworking tools, and it leaves a mirror finish, which looks nicer than the edge you get with the Chef's Choice. But bottom line is that I never brought the kitchen knives down to the shop to sharpen them, while this sits on the counter and I use it regularly.

I currently own the professional Chef's Choice model (which I highly recommend, by the way), but previously used this model made for home kitchens (don't let the word "professional" in Amazon's description of this model's title fool you--it's just a gimmick, there is a real professional quality Chef's Choice electric sharpener).

I purchased a Chef's Choice after reading good things about this electric sharpener in "Cooks Illustrated" magazine. It definitely made a world of difference. I was starting with good knifes--Wustof Trident and Henckels--which may have something to do with my success, but the Chef's Choice really does make home sharpening possible, and easy, in my experience. When a knife seems dulls I run it through the whole sharpening process (once every 4-6 months with a high quality knife that gets a fair amount of use), but to keep my knives constantly razor sharp--which is what I really love about the Chef's Choice--I just run them through the second stage a few times as soon as they're washed. That way they're always ready to use.

My only negatives would be ... 1) That I've had no luck sharpening serrated knives (like a bread knife), which the Chef's Choice claims is can do. Because serrated knives hold their edge a LOT longer than other knives, this isn't a major concern for me. To sharpen your serrated knives I suggest taking them to a professional--look under "knife sharpening" or "cutlery" in the yellow pages. It only needs to be done once a year or so and most will do it while you wait for around $3-$5 per knife. 2) My second caveat for the chef's choice is that the "third" stage on this model has little or no effect as far as I can tell. 3) Also, the motor in this model, is a little chintzy, when compared with the far more substantial professional model, which only has two stages by the way. For the money, it should really last longer than three and half years--which is how long by old one ran before conking out.

our knives were pretty dull from amateur sharpening. This put correct shape and knives are now sharp. It took several passes due to knives being misshaped over long period of time.

I have looked for a sharpener which is easy, fast and good. I finally have found it with the Chef's Choice 3 Stage model. The spring loaded grinders and polisher guard against too much pressure being applied as well as a consistent angle, which is critical to a fine edge. I am very well pleased.

I tried this sharpener on the many knives in our home (from pocket knives, to inexpensive kitchen knives, to two expensive Henckel knives). I was slightly disappointed with how well the sharpener worked--it just didn't finish the job and get my knives super sharp, as compared with when I used a sharpening steel on already fairly sharp knives. And, on the two Henckels, even though I used only the final sharpening section, it put a noticeable scratch on the knives (where the sharpening wheel touched the upper portion of the knife). In all, this sharpener is probably the best there is for an automatic sharpener for dull knives, but once the sharpener hones an edge, you may be better off with a sharpening steel to finish the job.

Having useed this sharpner on most of my old knives I can safely say that you wont find a better sharpner. However I must admit to feeling a little cheated when I found the same tool at three local department stores for $40 less.

I have had this model for some time now, and it has preformed without flaw. This particular model (#120) was highly rated in the last issue of Fine Cooking. There is very little metal loss and the edge is far better than a factory one. I think so much of this that I am buying another one for a birthday gift. You will not be disappointed.
