I am truly a beginner at the whole breadmaking experience, but based on prior reviews of this machine I decided to give it a try. Wow what a great machine! I couldn't be more excited about making bread :) It is very easy to use, easy to clean up and my loaves have turned out perfectly each and every time without any adjustments needed. The loaf size is perfect for a family of 4. If you've never baked bread this is definitely the machine to get. Happy breadmaking !

I love my new breadmaker. I am new to breadmaking. I did not make the decision to purchase the breadmaker until after reading over 300 reviews about it. Once I made the decision to purchase it, I copied all of the reviews and created a booklet with all of the tips, techniques and suggestions for best use of my machine. Not only is the breadmaker cute, it is easy to use!

For just 2 people, this will make fresh bread in a minimum amount of time. I had to adjust the recipes slightly to get a better loaf however. First, decrease the sugar to 3/4 Tbl., increase the salt to 1/2 tsp. and use 2 Tbl. of dry milk in any of the recipes that require it. Put in all the ingredients ending with the flour topped by the yeast. After starting the breadmaker, I wait until the first knead is done and unplug the machine, set a timer for 15 minutes - when it goes off, I restart the breadmaker and let it complete the cycles. I find the extra rise makes a difference in the appearance of the bread, it comes out light and tasty!

Once you play with the recipes a little, you can get a restaurant quality loaf anytime at home, with a minimum amount of effort!

The Just for dinner breadmaker DOES make a small loaf of bread in a short amount of time. However it takes up as much counterspace as a regular breadmaker and will probably be relegated to a back cupboard due to the size and inconvenience of using it.

The first one arrived broken from Amazon. I called the manufacturer and they sent a new one, without any hassles, and that one works just fine. I wish you could set it to let the bread rise a bit more, but I guess its simplicity is what makes it so affordable.

This little bread machine is the best. I have several big one and I use this one 10 times more. The loaf is great for supper and it bakes in 45mins. Can't get better than that. I am going to purchase these for family members who don't want to wait 3.5hrs. to make a loaf of bread. The bread out of this machine is even better than coming out of a big machine. You would never know it took this short of time. I have not had a flop with this machine. I have even used my own recipes for a small loaf. Lots of luck to whoever buys this machine. AB

I bought this machine as a replacement for my very large 2lb loaf machine after last kid left home. I simply didn't need so much product. With just myself and husband left, I decided to try the Just for Two breadmaker. I was amazed at the quality of the loaf, and it did (really!!!) only take 45 min start to finish. I invited one of the kids and her partner for dinner and still had enough bread to go around. Have made a loaf for dinner, then used the leftovers for toast the next morning...wonderful!! Makes just enough for a meal or two, none left to go moldy or otherwise wasted. NOTE: This little machine does exactly what it promises and no more....do not expect it to make fancy baked goods, even tho it does have recipes for some nice variations of the basic loaf (and they are excellent!!!) The troubleshooting guide is excellent for any problems you may have in the quality of loaf. If you are not experienced in breadmaking, you will need to learn how your environment affects bread, and this guide is very helpful in that regard. I would, and have, recommended this product to couples and small families who just want fresh bread with their meal. Reminder--This machine is not for you if you want such amenities as delayed bake cycle, dough cycle, light or dark cycles, etc. This really is a very basic, small loaf machine which is an excellent product when that is all you want.

it really does take less than five minutes to pile everything in it and it really does give you finished bread in 45 minutes.

this is my third breadmaker. the first i wore out, eventually the bearings broke. the second had a teflon lined pan, which i never approved of, and it was very difficult to get the bread out. the bread falls out of this one with no problems at all. i love it.

have not tried to do anything complicated and probably never will. just want a loaf of white bread made without chemicals. nothing will terrify you like reading the ingredients of white bread.

I have never owned a breadmaker before, so I can't speak to its relative merit compared to any other machine. But, I can say as a totally novice breadmaker, I hit the road running with this machine. So far, 3 months of bread making and not a problem. It's simple. The bread is lovely.

Living alone I seldom bought bread because I just couldn't make it through a loaf before having to toss it out. But, with this machine, I can have bread anytime I want (as long as I keep bread flour in the house) and have plenty for 2 days.

Absolutely the best toy I have ever purchased for myself!

Have enjoyed making bread with this unit. French bread is our favorite and usual loaf. Still trying some of the others. Wife complained that the flavor of the bread overpowered the rest of the sandwich.

Found it an excellant value for those who love to make their own bread and not waste a bunch. The loaves only lasted a day for the first few weeks (and 5 additional pounds). But now that we are used to it we make a loaf every couple of days. Prep to cleanup and finished loaf in about 1 hour. The house smells great too!

Once my family is used to eating our own bread, we discover that the bread that one buys from stores are way too salty and sweet, and there are also undesirable things that are added.

I've had this perfect little bread for several months now and just love it. Every loaf turns out just fine including the ones where I've substituted ingredients willy-nilly. I've had many other bread makers and they were either too noisy, didn't mix ingredients well, or, usually, turned out loaves that were too big to eat before they turned stale. This turns out a perfect small sized loaf. If you eat it too quickly, it is easy enough to make another. Just remember to let the unit cool down before starting another batch.
I do always check when the unit is mixing because when I sub ingredients they sometimes don't mix in as well and I just use my finger (usually clean of course) to shove everything together. It is so easy and convenient that I use it several times a month, unlike other bread machines that I was lucky to use several times a year.

->Compare West Bend 41077 Just For Dinner Breadmaker

I've had this breadmaker for a bit over a year now and I still love it, though the honeymoon has worn off somewhat. When I first got it, I made at least two loaves per week. Now it's one every 4-6 weeks at most, but that's to be expected with any new toy for me!

It doesn't mean it's any less of a machine - I just have other toys to occupy me when I get bored, so I'm not swimming in bread anymore. It's still great when I have a person or two over for dinner. I think it makes a nice amount of bread for 3-4 people for a single meal. When I make it just for myself, I usually have bread for three days or so.

One of the really great things is the ability to experiment with flavors. I get tired of plain white bread so once you understand the science of bread making (the base ingredients must be measured rather precisely) you can experiment with substituting sugars (use honey instead for example) and fats (olive oil instead of butter). You can also use different herbs, cracked pepper, whatever you can think of to make a new loaf of bread! One of my favorites is a combination of two breads in the recipe book that comes with the maker - Italian Herb + cracked pepper. Yum! I've also had great success with breakfast bread with cinnamon, brown sugar, and molasses.

I've also made the little loaves to give as gifts! I have some friends and family that really love different dipping oils, so I buy that as a gift and throw in a small loaf of homemade bread. It's a gift I know I'd love!

In conclusion, this is a great maker for a single person or a couple for regular use. If you've got a bigger family, or really big eaters a bigger machine would be a good idea.

Just finished a smoked turkey sandwich with dill chips on rye that just came out of my bread machine. Incredible. I was a little worried by the reviews from folks who had a problem with the yeasty flavor, the bread has a slightly different flavor than what comes from the grocery store but it's still very good. Crispy crust and soft texture. I wonder if some people are more sensitive to yeast just like some people are intolerant of cilantro (of which I am one). I read through a lot of reviews to collect the helpful hints, thank you all, and do proof the yeast. I misread the instructions while making the first loaf and used only one quarter cup of water instead of the half cup the recipe called for. While watching the ingredients mix I noticed that things were too dry. Realizing my mistake I added the remaining quarter cup of water scraped down the sides with a small plastic spatula during the mixing, and the bread still came out perfect. The recipes are somewhat forgiving, I used regular oats for the Honey Oatmeal instead of quick cooking, no problem and once added a handful of walnuts, yum! The Honey Oatmeal makes awesome toast! This is my first bread machine so is quite the novelty!

-> West Bend 41077 Just For Dinner Breadmaker

I've had this thing for 7+ years, and am in the market for a new breadmaker, but wanted to share my positive experiences with this one first.

PROS:
45 MINUTES! (well, add 3 minutes for throwing the ingredients in the pan)
Every recipe has always come out perfect.
Bread is dense and moist, and the crust is present but not tough, so it's good sandwich bread.
Size is perfect for single people or bread pigs who will eat a whole loaf if given a chance (I'm both).

CONS: There are no cons. This machine makes small loaves of bread in 45 minutes. The bread is as good as it can be given a 45-minute limit from start to finish.

Actually, there is one con - there are some great bread machine recipes online, but almost all need their ingredient amounts to be recalculated to make this small a loaf. If you don't like math, you are limited to the recipes that come with the machine. But at least they are good recipies.

But here is why I am looking into a new machine: I like crusty chewy airy old world bread that cannot be made in 45 minutes or even a couple of hours. I don't know if there is a machine out there that can make what I want, but I know this little beauty can't. So a word of warning - THIS MACHINE MAKES ONE KIND OF BREAD. The recipes are great and varied, but they change only the flavor, and do nothing to the texture. I'm no baker, but I think that kneading times and rising times are what shape the texture of bread, and with one 45-minute setting, no fiddling with ingredients is going to change that.

So I'm probably going to throw big money at a Zojirushi or something, but plan on keeping this one around for those times I need bread in 45 MINUTES!

And that IS a machine that is designed to make a small loaf of bread in a very short amount of time.

Trade-offs? Well, of course. The bread is not anything close to "homemade" in a traditional style or even to the best of breads one can buy at the local supermarket. It comes out with a doughy, almost muffin-like texture.

But is it hot? YES! Is it easy? YES! Is it a pleasure to have fresh, hot bread made from quality ingredients ready in 45 minutes? YES!

You will be happy with this machine as long as you realize that the most delicious bread you've ever tasted...cannot be made in 45 minutes.

AFTER READING OTHER REVIEWS ON THIS BREADMAKER, THERE SEEMED TO BE MORE FOR THAN AGAINST, SO I THOUGHT I WOULD GIVE IT A TRY. I THOUGHT IT WOULD BE NICE TO BE ABLE TO HAVE BREAD FRESH EVERYDAY IN A CHOICE OF FLAVORS AND STYLES. I AM A KITCHEN NUT SO I HAVE HAD EXPERIENCE WITH BREAD MACHINES BEFORE, JUST NOT IN THE SMALLER SIZE LOAF. I GAVE IT THREE SHOTS TO IMPRESS ME. THE FIRST ONE WAS LIKE A HOCKEY PUCK, VERY HEAVY AND DENSE. THE SECOND WAS A LITTLE BETTER, I WATCHED AND ADDED A LITTLE WATER BECAUSE THE DOUGH SEEMED TOO DRY, DID NOT HELP. THE THIRD WAS BETTER BUT STILL NOT GREAT. I DECIDED AGAINST THE BREADMAKER. THE WHOLE POINT OF HAVING IT WAS TO BE ABLE TO HAVE FRESH BREAD WITH MEALS WITHOUT HAVING TO BABYSIT THE MACHINE. I HAVE HAD 5 DIFFERENT BREAD MACHINES OVER TIME, I HAVE 2 NOW. THEY WORK MUCH BETTER THAN THIS WITHOUT HAVING TO WATCH THEM CLOSELY. I THINK THE MAKERS NEED TO RETHINK THE WORKINGS AND COME UP WITH A BETTER PRODUCT.

Mixing by volume according to owner's manual was at times hit or miss. I decided to weigh all the ingredients, flour and liquids, instead of measuring by volume. Perfect loaves now every time. I convert my favorite recipes to weight in grams. Only takes about 2 minutes longer to weigh all the ingredients versus measuring by volume. This results in a nice dough that is not too dry or wet.

For traditional white bread for every gram of flour I use 0.7 grams of water. I don't have to monitor the dough during kneading to ensure that I have a dough that is correct.

We make a smaller loaf based on 1 cup of flour, 140 grams, and add 98 grams of water. I still use the full packet of rapid rise yeast. I do decrease the other ingredients proportional, i.e. salt, sugar, etc.

We use the left over bread for toast, excellent. Better than store bought bread.

->Purchase West Bend 41077 Just For Dinner Breadmaker

This is a very simple little breadmaker that's fun and easy to use. We use it mostly for "specialty" breads like raisin or cheese. While all of our breads have been quite successful, it is simply not reasonable to expect to get a French Baguette with the crust and airiness that you would get if you made one by hand the authentic way. This little breadmaker makes it possible to have fun with making different little breads on a daily basis. It's not for the epicurean professional-it's a breadmaking "toy". The dough is highly yeasty but we haven't found any loaf to be heavy or overly dense.

Go ahead, buy it, enjoy it, but understand its limitations. There's nothing wrong with having a simple and fun tool in the kitchen-and there's not much that's better than having the smell of fresh baking bread in your kitchen while you're making dinner after a long day at work.

Review: Terrible tasting, unhealthy bread, really fast
by: Jerry on date: February 14, 2007

->Compare West Bend 41077 Just For Dinner Breadmaker

The other reviewers must have a very weird taste for bread. This bread it extremely yeasty, and it is very far from standard. If you like yeasty flavored bread, buy this, otherwise -- don't bother.

The french bread or homemade bread your mother has made has nothing to do with the one this machine makes in terms of taste.

Because I really wanted the bread machine, and don't have time to return it, I tried all the methods of previous reviewers, such as proofing the yeast. I use all the sweetener for white bread (the recipe for french for example) in 1/2 c of water (temperature about 105 Fahrenheit, about 40 Celsius) and use only 1 teaspoon of the yeast. Level teaspoon. Other reviewers tried with heaping teaspoons, and the whole amount.

Even with this tremendous reduction in the yeast amount, the bread still tastes very yeasty. This is NOT normal for a loaf of bread, not to mention it is not healthy for you to consume such enormous quantities of yeast.

The problem is, unfortunately, in the short rise cycle. The yeast does not have time to develop fully and leaves a yeasty flavor into the bread. The less yeast you use, the better (the less yeasty flavor), but the minimum seems to be 1 teaspoon. Going lower will result in bread that does not rise... and will still have a yeasty flavor... I don't think there's any way to make this work. A bread just takes longer to make.

In addition, look through the instructions, it sais how large the bread will be. You might be surprised how small it actually is. Not that it's bad, just unusual. Go through the measurements and take a ruler to get an idea. The bread is as large as two (mens) fists one next to te other, which makes it really small. It can serve 2 people, but don't think you can serve 4 and leave them satisfied.

Also, if you were planning to make one bread and then immediately make another, you won't be able to. The machine needs to cool down before you can use it again and that takes quite some time. That's also not in the instruction manual, so expect other surprises too.

If you were planning to go through two kneading cycles, that is stop the machine when it beeps it will start baking and restart the cycle, to remedy the yeasty flavor, plan on not being able to do that too, because, again, the machine needs to cool down.

I really don't think there is anything to do to save this machine. I used it for two months twice a day (one bread for me one for my husband) and the only way I found to make it work is to use it just for the kneading, then leave the dough sit another 30 minutes, knead by hand again, leave it sit again and bake. That's, of course, done in desperation, I am going to throw it away, because the effort of kneading such a small loaf is not worth it. I bought the Oster Expressbake 5838 machine instead and it's much more satisfying.

Oh, btw, those reviewers who got bread but it was hard, or it didn't rise properly, the problem is with the ingredients. It was hard, because you put too much flour. It didn't rise because you put too little. Breadmaking is a sensitive business and depends on things like the humidity of the air and stuff. You just need to adjust the flour/water amount (that is baby the machine while it's running), because given the loaf is so small, it won't be forgiving.

Overall, don't buy this machine. Unless you really like very yeasty bread and insist on not eating healthy.

This breadmaker is simply perfect for my needs. Not sure what the problem might be with reviewers who have had somewhat disastrous results. It seems fairly fool proof in procedure. So perhaps they have had "lemons." All in all, fun to try new recipes, share a loaf with a few people...in 45 minutes! I would recommend it to anyone who wants a small loaf option.

I was disappointed to learn after buying this product that it will not do 100% whole wheat bread. You have to mix it with white flour. Also all the loaves I have made using white flour have produced heavy hard little balls. I have measured precise and accurately still with no good results. I am very disappointed in this product.

I have had a lot of bread machines in my life. And I always ended up giving them away because they were either too clunky, or the bread took too long to make, or the bread just didn't taste great. Another problem I always had is that fresh bread really only tastes good the first day, so I always ended up tossing out the leftovers from the loaf. This is the BEST bread machine I have ever had. I have since bought it for two friends, who say the same thing. It's the perfect size for a small counter space. The bread comes out flawlessly every time, the recipes are spot-on and easy to personalize if you so choose. and it's just the right amount to make for a single meal. Need more? No problem. Just make another loaf in forty minutes! They're not kidding. It really is that quick! I highly recommend this product to anyone who wants easy-to-make fresh bread that tastes great every time.

I have been the happy owner of a 2 pound bread maker for over10 years and the time had come to replace it. I thought I would buy one that makes a smaller loaf and after reading the reviews here, picking this one was an easy choice.

The shipping was fantastic - it arrived the next day using Amazon Prime!

The bread maker arrived in prefect condition and I unpacked it, washed it and read the instructions completely.

I followed the instructions for the "Old Fashioned White Bread" recipe and was surprised that it required the same amount of yeast its small loaf as my old machine did for a large 2 pound loaf. I followed the steps exactly and waited for my loaf of bread to be done. When the bread maker beeped, I opened the top and was very disappointed at the results. What I ended up with was a gnarly flat topped, yeasty tasting, VERY DENSE (like a bagel)loaf of bread that was an inedible brick. I tried making more bread adjusting the liquid as suggested in the manual troubleshooting guide and had the same results. The bread tasted yeasty and unsweet.

I think part of the problem is that the bread only rises once instead of twice like larger bread makers and this small loaf requires as much yeast as a large loaf to make it rise (only once) in 45 minutes.

I returned mine and will purchase a different brand that will work properly and make an edible loaf.

Many years ago I owned a 2 pound Breadmaker. It was an excellent machine, however 2 pounds of bread with no preservatives results in wasted bread.

This machine is perfect for your typical single guy. You get plenty of bread for a dinner for two. But if you are the only one eating, not so much as to have the bread go to waste.

The controls are simple.
The unit cycle time of 45 minutes allows you to plan, or even last minute plan a meal with fresh bread.

This is my second breadmaker and I really have to say that I like this one. The loaves are small, but its fun to have fresh loaves as gifts in a gift basket of goodies or just with your meals. In my previous, larger and more expensive breadmaker the bread never turned out quite right. So far when I use this little guy the loaves turn out perfect. Maybe I am just getting better with time...who knows. But the breadmaker is working very nicely, and doesn't take much counter space compared to the large models.

I thought about buying this bread machine last year but hesitated. This year, after reading even more positive comments, I decided to go for it. Am I glad I bought it!!It's absolutely the very best bread machine I have ever used. I gave my old machine away and have been frequently making bread for dinner in this little wonder. PLENTY enough bread in the loaf size for two hungry bread eaters plus enough left over for the next days breakfast!Makes delicious bread!!
A couple folks here complained about a strong yeasty taste, nope, not a problem, it tastes great to us. Clean up is a breeze, and I don't have any difficulty with the turning part in the bottom coming out of the loaf after it's baked. I just purchased a box of gluten to add to my recipes, and will start using it, but the bread size loaf is great without gluten. It's not a heavy machine to lift and it's small enough to actually put in my kitchen cabinet when not in use. That's amazing and a great feature! It's a gem of a machine, just love it love it love it!Take the chance and buy one, you'll be so happy with it!!I'm just amazed, as are all the rest of us, how quickly you can have a loaf of bread finished and on the table while you fix dinner!!This is such a winner of a machine!

My husband and I love this machine. It's small, but usually it's just the 2 of us, so it's perfect. It's fast enough that if we have more than the 2 of us for dinner, the cool down time is quick and allows enough time to make an additional loaf. We love the normal bread recipe but have experimented with a couple of others that have also turned out well. My husband begs to "make the bread" often. We highly recommend this one. Maybe one day we'll graduate to a bigger one, but I doubt it.

This little breadmaker is everything that all 248 reviews that I read before the purchase said it would be! I don't even use my other breadmakers anymore. I've kept them in case of company, but will probably give them away. The yeast taste is not overpowering, the textures on the different bread recipes have all been good. I especially like the buttermilk wheat bread recipe, and the feta/black olive bread is good as well. But as has been said over and over on many of the reviews > the best part is quick bake time, good quality bread, excellent crusts, no waste, and freshness. If you have read all the way to my review, just stop here and buy this breadmaker.

I knew nothing about breadmakers! Sure like everyone I read about them
but it seem the better a model was the more they seem difficult. Then
I spotted the Just for Two, took my time read all the reviews and ordered
it. Wonderful. Could not be easier! I followed the recipes that came
with it, but did make a change like that one lady suggested about dissolving yeast water and sugar first. The first few times I made the
bread NOT dissolving yeast I thought the bread tasted yeasty. But her
suggestion fixed problem. It's adorable, perfect hot bread and just
enough for 2 hungry people or save some for breakfast. Bread to me
loses some of it's appeal when cold, so no leftovers suits me fine.
I have NOT made a bad loaf yet. I do cheat and use some mixes, carefully
dividing in half as mixes make a 3lb loaf and this little guy makes 1.5 lb
loafs. I add nuts, crushed fread banana, seeds, and in under 5 minutes
to prepare you would think my bread was gourmet! I love it, it's so Simple Stupid which is exactly what I needed. It's funny as I give out
these little loaves, people often say, I have a breadmaker but it's still
in the box, I should get it out. But I don't know if it will be a good
and easy as mine!

Less than an hour after the UPS truck left my new breadmaker on the doorstep, I was taking a gorgeous little loaf out of the machine.

I followed the basic white bread recipe included in the manufacturer's booklet (it includes 24 recipes) and the bread is sensational. It has a wonderful crispy crust, and flavorful crumb. Beth Hensperger's Country White Bread from her Bread Machine Cookbook, is also splendid, with an extra good crust due to the addition of a teaspoon of gluten.

I've converted a number of favorite recipes using the formula in the booklet, or by multiplying a 1-1/2 pound recipe by 40%, or a 2 pound recipe by 33%. If you have a favorite recipe, it only takes a few minutes to convert the recipe to a 10 ounce loaf.

This is an extremely simple machine, without even a timer. It does what it says, though, baking a perfect loaf of bread, "Just for Dinner."

I purchased this breadmaker about three years ago. I was impressed by the 45 minutes from start to a finished loaf of bread. This is an EXCELLENT little machine that makes a loaf of bread "Just For Dinner." I use mine all the time and keep telling my friends they need one too. If you decide to make two loaves -- you need to wait about 15-20 minutes for the breadmaker to cool down between, but I've done that when I was having company for dinner. It was nice to set one loaf of fresh baked bread at each end of the table. Everyone who has seen it has been impressed. What's great too is many times in the evening I will make a loaf for lunches the next morning. It's so quick. I have noticed that my loaf always rises nice and big if I warm my liquid to at least room temperature (or a little more) first. I have experimented, and the only times my loaf has been a little smaller was when I left my liquid at refrigerator temperature and made my bread. Fresh bread is always the best bread and with this breadmaker I rarely ever have any left over...but it's only 45 minutes to another fresh loaf.

I love the whole process of making bread so had resisted buying a bread machine for years. However, a really special deal on Amazon and all the positive reviews convinced me to try the Just for Dinner, and I am really glad I gave in to the impulse. I have never had a failure with this and have served guests with all kinds of breads made with the machine. I have even used it for pizza crust on an especially busy day. Hints from other users that have added to my success:

Add 1 tablespoon essential gluten to each recipe and then use regular unbleached flour or, even better, 100% whole wheat flour.

Warm the water, put in the pan and add the yeast and less than a teaspoon of sugar; let sit for 5 to 10 minutes before adding fat and the rest of the ingredients.

When you are making a loaf of bread and have all the ingredients out, mix up all the dry ingredients for a second (and third and fourth...) loaf. Put in small zip lock bags, label with the name of the recipe, and store in a covered container. Then you will always have your "mix" ready for even faster preparation.

Don't be afraid to experiment after your first loaf or two; as many others have pointed out, this is a very forgiving machine and, even if you end up with a flop (which seems pretty hard to do!), you will have wasted only small quantities of ingredients.

I have entertained 12 people with soup and bread suppers by making three or four loaves in succession, each slightly different. As pointed out, just allow about 10 minutes to cool between.

I orded it and have been using it for about a month now. Words can't describe how wonderful it is. Very simple to use and makes perfect loafs everytime. There is only two settings (1)Basic/Specialty (2)Wheat You can't any easier than that! It makes the perfect size for dinner. We always eat the whole thing. You know as well as i do that bread isn't as good the next day anyways. You just start the bread when you start dinner and its done when dinner is ready (45 minutes). The only negative issue i can think of is that there isn't enough recipes for this machine. Other than that i would highly recomend it for a small family.

Great machine. Produces a quality product every time. Hear are a couple of tricks that I have found.

1- Heat the water to 90 degrees, add the yeast and sweetner, then measure the dry ingreadents. This will allow the yeast to bloom and avoid any yeasty taste.

2- Combine dry ingreadents and sift. Makes a much smoother loaf.

3- Don't be affraid to experiment. Substitute rehydrated dried fruit for raisens in the raisen bread recipies.

4- Combine recipies. ie onion and garlic.

5- Substitute at will. ie.. tyme for parsley flakes. Extra sharp chedder for swiss in the jalapeno/swiss.

6- Modify to taste. Minced garlic instead of garlic powder. Add a splash of Tapito sauce to the Jalapeno/swiss.

In other words, have fun with this great little gadget. If your experiment doesn't work out, you wont have lost much, and if it does, you are brilliant.

Breadmaker works great...does make a small loaf of bread in 45 minutes as advertized. However, all recipes seem to have the same texture...which isn't unpleasant, but not exciting. We use it in our RV with lots of success. It just doesn't make bread like our regular breadmaker that we have at home. It's also very difficult to adapt regular breadmaker recipes to this size...and, if they aren't exactly right, the bread isn't too good. So, it seems that you're limited to using only the recipes in the booklet that accompanies the breadmaker.

Review: Freed from the tyranny of store-bought bread
by: A Music Lover on date: January 29, 2006

->Buy Online West Bend 41077 Just For Dinner Breadmaker

After reading the mixed reviews on this nifty kitchen tool, I was a little hesitant. However I bought it anyway since I really dislike store-bought bread, and I am glad I did.

I started with the basic recipe, and like others, I did notice the yeasty flavor. It bothered me a little, and I considered returning the machine. But I really wanted to be free from buying bread at the store, so I decided to try some of the ideas mentioned in these reviews.

The one thing that made all the difference is proofing the yeast before putting everything in the bread maker. Once I started doing that I turned out tasty loaves every time. Proofing the yeast is simple and quick to do. I start by heating the liquid for the bread to 100 - 110 degrees F in a small bowl in the microwave, then I dump in the yeast and a portion of the sweetener. That lets the yeast get started while I measure out the dry ingredients in a separate bowl.

By the time the dry ingredients are ready (3-5 mins), the yeast is nice and bubbly. Then I pour the yeast/water mixture into the bread machine pan, dump in the butter and dry ingredients, level it, and press start. It takes one extra step, but it is well worth it for the great loaf this creates. And this method allows me to use either type of yeast - fast rising or active dry.

Recently I began experimenting with some of the other ideas posted here. For example, I use the wheat setting no matter what type of bread I am making. I also have started adding vital wheat gluten to my wheat bread, which seems to help with the height.

One thing I am just starting to experiment with is the idea of running through the knead and rise cycles twice before cooking. The idea being that this is simliar to the more traditional method of making bread. What I do is listen for the beeps at the end of the rise cycle, just before the cooking phase starts. At that point I turn off the breadmaker and unplug it for a second, then plug it back in and start it over again. It takes about 20 minutes longer this way, but my bread does seem to be slightly lighter. Next time I am going to stop the bread machine longer to allow the dough to rise more before I restart the machine.

You may be wondering why I don't just buy a traditional bread machine if I'm going to all the trouble of fussing with the extra rise cycle. I have had bad experiences with traditional machines. E.g., having to throw out bread made of a lot of expensive ingredients when it flopped in those other machines. Plus the loaves were way too big for my small household. What's worse, I had to wait 3-4 hours to discover it was a flop. I hate to waste money, but even worse, I hate to waste time. In contrast, the West Bend is very forgiving. As long as I proof the yeast, I get a great loaf of bread every time, so that even this non-cook feels comfortable experimenting. Besides, I don't mind waiting an extra 22-30 minutes, but I would mind waiting for 3-4 hours. And now I never have to throw out old bread from a large, expensive loaf. Thank you West Bend!

This breadmaker is everything I expected it to be from reading other reviews. I've made some variety breads, but mostly I appreciate it for last-minute fresh bread. I don't usually keep bread in the house and this breadmaker gives me fresh bread within an hour. For white dinner bread, I prepared containers of all the dry ingredients. When I want bread at the last minute, I just melt butter, put it in the breadmaker with water, add the container of dry ingredients, add the yeast; and within a few minutes, everything is in the breadmaker and warm dinner bread is on the table within the hour. Sometimes there's even a little left over for next morning's toast.

I don't usually write reviews but I had to come back here to say how pleased I am with this purchase. This is a wonderful product, and makes excellent quality bread. I tweek my recipies a bit by adding a tsp of gluten and a tsp if baking powder, and I use wheat flour only (not bread flour). The results are great. I love the recipies that are included. The loaf size is perfect for myself & my hubby. I am not a kitchen person, but making bread using this product is VERY easy and I actually enjoy it. Clean up is easy and the machine is a nice size for your counter top. It is fun making a different bread each time. I highly recommend this product.

This breadmaker is perfect for making those loaves to share among our 4 person family. I find that I can reduce the amount of yeast to about 1.5 teaspoons on the "basic bread" recipe by starting the machine for about 30 seconds (empty), which warms up the interior, and then adding the yeast, sugar, butter, and milk to "pre-heat" for 3 minutes or so. Then I add the flour, salt and water and start the cycle. This yields good results. I have not tried any recipes from other bread machines; the ones in the pamphlet that comes with the machine are doing fine for us. As with all bread machines, you need to be sure the liquid ingredients are not too hot or cold; I heat them to about 100 degrees (F) before use.

One note: For a recent party, I made several loaves in advance. I discovered that the machine has to cool down between cycles. I used a cold wet rag to wipe down the interior and was able to do loaves about 10 minutes apart.

Overall I would recommend this to anyone who can live with the small loaves, and who is willing to stick to the included recipes.

Well, I'll have to be in the minority here. Maybe I'm a bread elitist or something...

Does what it says, makes bread reliably in 45 minutes. Most higher primates should be able to operate with ease. Instruction manual certainly helpful and well done.

Unfortunately, as a small number of other reviewers have pointed out, the bread is really not very good. It is extremely yeasty in flavor. So much so that three hours and many glasses of lemonade, soda and water later as I went to bed (post-brushing teeth I might add) I could still taste yeast in my mouth. Blah.

And as others have pointed out the bread is by necessity very sweet. I'll give it good marks for crust, a very nice crust particularly for a bread maker. Texture is very poor, no surprise for something done in 45 minutes.

So, are these reasonable compromises for bread in 45? No, I don't think so. I can get a much nicer loaf for a reasonable price on the way home from work at a bakery or better still I can pick up yummy Il Fornaio dinner rolls at Trader Joe's for $2.19 for six and warm them in the oven and have *much* *much* better bread with my meal for the same price or less.

I known the majority has spoken, but my advice is give this a skip. Returned mine.

I have gone through many, many, MANY regular bread machines and each one ends up giving me bread that is too dense, too short, too something-not-right. I first bought this machine because it made a loaf in 45 minutes, perfect for small dinner parties and last minute bread cravings. It does make a small loaf, but that's also how it can finish so quickly. Every time I've used it, the bread has come out perfectly. You do have to let it cool way down if you want to make 2 loaves in a row. I like being able to have a small loaf of bread and not have to throw out the stale leftovers days later... there are no leftovers!

I have a big bread machine which works fine, but I find it hard to eat an entire 2 lb. loaf of garlic/onion bread or whatever. This machine makes a little mini-loaf of specialty bread--perfect for dinner. As others have said, it is easy to use. Just throw in the ingredients, press start and voila--45 minutes later, delicious hot bread for dinner. I highly recommend this great little appliance!

I have been making my own bread/rolls/buns, etc. for 40 years. I never owned a bread machine before. This wonderful little machine consitently churns out really tasty and very quick bread. I keep mine on my RV and use it when I'm cooking at drag races. It takes up very little space in the cabinet and it seems to pull very little power from the generator. One loaf is plenty for up to 4 hungry racers. I mix up my own mixes from the recipes in the booklet and keep several baggies of mix on hand. Just because it's a habit I can't break - I put the water in first and sprinkle on the yeast with just a few granules of sugar to proof for maybe 5 minutes. It's really perfect every time. I can't do without fresh hot bread just because I'm on the road or in an RV. I have recommended it to all my friends. I'll probably be buying a few to give as Christmas presents too.

This is my first breakmaker. I just made my first loaf of bread with this machine today. I was very happy with the result. Now that I know I can make fresh bread, I don't know if I'll ever go and buy ready made bread from the grocery store since most ready made bread contain preservatives. I don't have another bread machine to compare this one to, but I can say that I'm happy with the bread it makes because it doesn't over bake it. I tend to like very soft bread, with lightly browned crust. I really don't like hard crusts - I rather eat under cooked bread than hard crusts. This machine bakes the bread exactly the way I like it - soft. It's also fun to have a window to see it knead the dough. I don't have any complaints. I find it really easy to clean. I love how fast it is (45 min), and how it beeps to tell you it's done. It might be a little small, but like the previous reviewer's opinion, I find that to be a plus because then I won't eat as much bread... because I can totally devour the whole loaf myself in one sitting! And it doesn't take up as much counter space. Excellent buy - Enjoy!

Review: "Just in Time" Bread

->Buy West Bend 41077 Just For Dinner Breadmaker

I have had the West Bend "Just for Dinner" breadmaker for four months. This is the only item that I have owned that I have felt compelled to review. Even noticing that 213 other people have submitted their thoughts I have opted to add my opinion to the stack.

I can start bread when I get home from work and still have it ready in time for dinner. I have tried several of the recipes offered and have not been disappointed with even one. The size is just right for the two of us. If it is not eaten in one meal, the leftovers make great toast for the following morning. I purchase my bread flour and yeast at a bulk food store thus keeping the cost to a minimum.

The most used recipe is the French Bread. Serving this recipe made with olive oil and spread with jam provides a delightful way to watch cholesterol. My husband needs to be on a "heart healthy" diet and is not normally a bread eater. Since he likes this bread, I am able to serve smaller cuts of meat.

I have not adjusted ingredients but have raised the bread to the "beep" and used the dough for cinnamon rolls or pizza dough. For the cinnamon rolls I rolled the dough, spread with butter, sprinkled with cinnamon and brown sugar, rolled, and cut into four rolls. I placed them into a pan prepared with brown sugar, butter, and nuts. I let them raise 15 minutes and baked. Superb! The best part is that I was limited to two rolls. If I had made a dozen, my husband would have eaten two and I would have eaten ten.

I cannot imagine a week without my "Just in Time" Bread. If my machine ever fails, I would replace it immediately. My fear is that it may not be available or worse yet - it would be replaced with a "new" and "improved" version.

I bought this little bread machine on June 1, using the super saver shipping option. What a suprise when it showed up exactly one week later about noon. (Thank you Amazon!) By 3pm, I had baked my first loaf using the recipe in the front of the booklet. It was pretty good. And it was so easy to clean up after it was baked. Then I went to the store and bought a bread machine mix. It turned out excellent! And there was enough mix left for a second loaf. I have been baking bread, on average, 2 or 3 times a week since I received it. Haven't tried the french bread yet, and not sure that I want to. The recipe doesn't sound very appetizing, but maybe I'll experiment with it. My family loves to get these little loaves of bread from me, and 2 of my sisters are planning to retire their larger bread machines and get one of these little babies! I have also made 4 hamburger buns for 4 hamburgers, and they turned out great, thanks to the reviewer who said how easy it was to make rolls. Thank you, reviewer! One of the little 'feet' thingies was also missing when I opened the box and took everything out, but, hey, I just looked in the box and there it was! (I've gotten enough 'stuff' through the mail and UPS to know not to throw anything away until it's all accounted for.) So far, I have no complaints and am very pleased with this little breadmaker, and recommend it to all my friends and family! I really can't say enough about this bread maker, and how nice it is to have homemade bread any time we want it, and quickly, too!

I bought this breadmaker 2 years ago. The first loaf I made was the French bread and I thought it was, well, let's just say it didn't taste like french bread. It was too sweet and yeasty tasting. Then I made the basic white. It was just as disappointing. Not to be put off by that, I tried many of other recipes provided in the instruction booklet. This is where I had much more success. The favored breads are far better tasting than the plain ones.

As far as unit itself in concerned, it is small. I keep it in a kitchen cabinet when not in use. It's not too loud during the kneading process and couldn't be simpler to operate. Just press a button.

If you follow the instructions, you can't go wrong. I always get consistent results. I even experiment with adding different ingredients. So, if you like flavored breads, this is great little machine.

I read ALL the reviews, and did other research. The bread isn't as well developed as if it had risen for 3+ hours, but then that's the whole point here, isn't it? Never had a bread machine before, was sort of afraid of it to begin with, but it really is idiot-proof. I did as others advised (as all bread machine users advise): put things in in the right order, measured correctly. Reading that others here have made all sorts of breads encouraged me to start experimenting with adding flax meal, substituting sweeteners, etc. In other words, only a few loaves later, I'm not afraid of it any more.

We won't get exquisite crunchy-crusted French baguettes with elastic interiors, but we can let things rise longer and do as others have suggested and make a lot of other awfully good things. And I'm free from the tyranny of supermarket bread, and even parbaked restaurant industry bread. I now refuse to eat anything crappy, and that's a good thing.

ONE CAVEAT - The first loaf I made was from a mix, and it was awful. I forgot that this is a 3/4 lb loaf, not 1 lb., and I'm not great with math, so my adaptation of the mix was sub-optimal. No problem for me though--using a mix is, what, 5 minutes faster? I'd rather know exactly what is in it. My whole wheat bread from scratch is much better than the whole wheat mix, even when I did the math right.

Review: Worst bread I've ever tasted
by: Liora Hess on date: June 4, 2005

->Deals West Bend 41077 Just For Dinner Breadmaker

I bought this machine largely based on the positive reviews here. My previous model was a traditional Oster breadmaker that lasted many years. However, the idea of 45-minute bread sounds great to those who are used to waiting at least a couple hours with the traditional machines.

Though lots of reviews here mention "yeasty" taste, I really wasn't sure what that meant. I figured it was some minor flavor detected by those who really KNOW their bread - the same kind of people who would open a bottle of wine and comment on the woodsy flavor with nutty undertones.

So I was thoroughly unprepared for the very off-flavor of the bread. It is a taste that is difficult to get rid of, even after brushing your teeth and tongue afterwards. It is strong, not at all mild. You smell it as the bread is baking, and it is absolutely evident in the final product.

I made two loaves of this bread, both french bread. The first one, I did exactly as directed. It came out fluffy with a golden crust. The taste, however, was horrible as described above. It is unlike any bread I have ever tasted before. It is evident even when putting something like jam on the bread.

I really wanted to keep this breadmaker; I need one now and don't have the time for a hassle of sending it back. So I ate several slices, trying to disguise the flavor with condiments, but it is just so bad that it can't be done.

I then read through these reviews again, all the people who are doctoring their bread - "proofing" before baking their bread by taking water and adding yeast and sugar, stirring and letting it sit for several minutes before adding to the bread machine, etc. Because I need a breadmaker and wanted this to work, I tried that, using a bit less yeast. The result was a slightly denser bread that was still soft but STILL had that disgusting strong yeast flavor, even if to a lesser degree.

So I'm sending this back. It is ridiculous that people are having to go to lengths of trying to mix up the yeast ahead of time to get an okay loaf of bread. To me, one of the purposes of a bread machine is for convenience. With a good bread machine, you're not messing around with ingredients, premixing things, etc. You're dumping the stuff in, hitting start, and smelling and tasting good bread without an overpowering yeast taste.

Other miscellaneous things:

- Yes, it makes a small loaf. I was shocked to see how small; however, the description is there. Maybe you'll want to take a ruler and get an idea of what size of loaf it makes before buying. I was surprised, but okay with it. However, please note that with typical American appetites, this little loaf is certainly not going to feed a dinner party of four. That is laughable.

- Tiny loaves are cute, but make for odd little sandwiches in which pre-sliced ingredients meant for a typical size loaf may hang over a good bit.

- The unit is not white. It is more of a beige/tan with flecks.

- It is very quiet. Mine rocked on the counter as it mixed. After the bread was done, I turned the unit over to discover one of its rubbery feet was missing. I looked around and found it near the packing material. Since the feet aren't glued in, but can be pulled out, it's easily for them to come out if they get caught in the styrofoam that comes with shipping. You might want to check that everything's in place before getting rid of packing material.

- Packing material - huge box inside which comes your breadmaker and lots and lots and lots of feet of those air-pocket things used for packing. This is okay, but makes a return not so convenient. Trust me with the fact that you may be seeking a return once you taste a loaf.

- Shipping times - Amazon's ad says "usually ships in 24 hours". Mine didn't ship for over a week. When I was waiting, I called Amazon and couldn't get a good answer as to why it hadn't gone out.

In summary, very bad tasting bread. I'm not new to bread machines or someone who isn't measuring ingredients correctly. This is just bad, YEASTY (strongly so) tasting bread. Very much not recommended. Mine is being returned.

->Buy West Bend 41077 Just For Dinner Breadmaker

I have used bread machines for 15 years. My favorite thing about them: The ease of making fresh bread (my favorite food) and how it tasted freshly made; and the smell when it is baking. My least favorite things: the often large and oddly shaped loaves, and how it tasted a couple of days later.

Until I bought this machine, my favorite machine bread was "the 58 minute loaf" that my present machine makes. I love the quickness and the lovely somewhat yeasty taste.

So as you can imagine, the Just For Dinner Breadmaker is a combination of all of my favorite bread machine aspects. It is fun, it is quick, it is delicious, it is eaten in two days, then I get to try a new recipe.

I ordered my machine on Saturday, May 14th and opted for the free (slower) shipping. My machine arrived at 7PM on May 19th. At 8PM I had my first loaf, perfectly shaped and browned, wheat bread cooling on the rack. My husband and I ate almost the entire loaf, it was so good. The next morning I made the buttermilk wheat loaf. It was JUST as perfect.

I highly recommend this excellent machine.

->Cheap West Bend 41077 Just For Dinner Breadmaker

I have been using my little guy at least a couple of times a week for months and have NEVER made a bad loaf of bread. That said, I stopped using the recipe book after the first two loaves. I use the generic formula of flour, liquid, fat, sweet, salt and yeast as a springboard for the imagination. I have used many varieties and combinations of whole grain flours whithout cutting them with white flour. I have added cooked whole grains and raw or cooked seeds, nuts, and fruit. I don't bother with milk powder; instead I use milk, sour milk, buttermilk, soy milk, or the whey from yogurt as the liquid. For the fat I have used a variety of vegetable oils, melted butter, and melted shortening. I have succesfully used a teaspoon of sugar instead of a tablespoon. I have substituted brown sugar, honey, molassas, even a fruit reduction for the sweetener.

I add all of the wet/moist ingredients together in a bowl, microwave to reach the recommended temperature, then transfer to bread machine insert. Then I combine all of the dry ingredients and microwave for a few seconds to take take the chill off as I store my grainy things in the freezer. Dry on top of wet, jiggle it down level, and into the machine. Use that opportunity at the initiation of the continuous mixing cycle to check on how the ingredients are coming together and adjust the wet/dry ratio accordingly.

One reviewer complained that you can't make rolls or buns; not so! Preheat your oven when you start the machine. (I get it to ~400 degrees F.) When it beeps that it is ready to begin the bake cycle, turn the bread machine off, dump the dough out onto a floured or oiled surface, make whatever shape you want and pop it into the oven. (I use a baking stone.) I have made dinner rolls, sandwich rolls, flat bread, bread sticks, even crackers! I am going to experiment with bagels next.

Use your common sense. If you have ingredients with inherent moistness, fat, sweetness or saltiness, cut your liquid, fat, sweetener or salt. The more you play, the better you will get at making bread products customized exactly to your personal tastes.

->Sale West Bend 41077 Just For Dinner Breadmaker

Disclaimer: had to rate to post... so my 5 rating is based on how satisfied i am with the variety of recipes.

Okay, I noticed reading the reviews of this product that everyone mentions 'how many' slices you can get of one loaf... and that is really subjective. Here are the dimentions as mentioned in the product information.

Dimensions:
4 1/2 " tall
5 1/2 " wide (longways on top of loaf)
3 1/2 " wide (sideways on top of loaf)

The loaf pan seemed smaller than i thought it would be(since the product claimed it could serve up to 4 people... which is true if you give them one meager slice per person or so...). If you are a bread lover and like thick slices, you will get 2 thick slices for 2 people- which is perfect for 2 bread lovers accompanying dinner. ... the remaining bread slice in the middle you'd have to share.

I have not used the breadmaker yet, but the bread pan size doesn't bother me. I figure if my spouse and i bought a bigger breadmaker we'd end up freezing loaves, and i'd personally rather make a couple different kinds of bread than make a whole lot of one kind of bread. The 27 recipes provided by West Bend sound really good:) ...bread recipes range from potato bacon bread to dill bread, feta cheese bread, tomato basil rye bread and more exotic or some more traditional recipes. Plenty of opportunities to experiment with recipes methinks.

->Shipping West Bend 41077 Just For Dinner Breadmaker

This is the first bread machine my husband and I have ever owned, so while I can't compare it to other machines, I can say that the West Bend has absolutely delighted us from its first use. We are not experienced bakers, so this machine must be very forgiving because it has turned out terrific loaves of bread, time after time, without a single ugly-looking or off-tasting mistake.

The machine really does complete the entire bread-making process in 45 minutes, which is terrific because I can put the ingredients in the machine, turn it on, and by the time I finish cooking the rest of the meal, the bread is done! The loaf is easy to remove from the pan, and clean-up has been a snap. The machine goes through only one rise cycle and requires an entire packet of quick-rise yeast, which does give the bread a slightly "yeastier" taste and aroma than other breads. But we still find the bread delicious and are not at all bothered by the slight yeastiness. To us, it just tastes hearty and flavorful.

As others have said, the baked loaf is a very cute oval shape (not a weird, tall cylinder, like full-sized machines apparently make) and is perfect for two people. To be honest, it's really more than enough bread for two; we slice it into about 5 or 6 slices (3/4-inch wide), and usually save 2 of those slices for later, to have as an after-dinner treat with some sugar and cinnamon sprinkled on top. For comparison, if you eat at Outback or Lone Star Steakhouse, the West Bend loaf is taller and produces a few more slices than the brown bread loaf they bring you as a free appetizer at those restaurants. Those who think the West Bend loaf is too small for a two-person accompaniment to dinner are probably in the habit of eating very large portions. (Technically, ONE 3/4-inch slice of this bread is ONE serving, so if 3 slices aren't enough for you, it's really not the fault of the machine.)

I give this product 5 stars because it's a quality, reliable machine at a great price; it has unfailingly produced great loaves of bread with nice shapes, perfect crusts, and soft, yummy interiors every time, despite our inexperience with bread-baking; and it has eliminated the 3-4 hour wait normally required for home-baked bread. We love it and would buy another in a heartbeat if ours ever gives out.

I received the "Just for Two" bread maker machine for Christmas. I love it! I've been baking bread for the last couple of nights and am very impressed. I have always been disappointed in bread makers because the center of the bread doesn't always cook right and heavier type breads get hard on the outside and undercooked on the inside. Not so with this machine and the bread is baked in 45 minutes! I work a full time job and am an hour away from home. With this machine I can have fresh bread for my family of three by the time I finish cooking dinner. Don't let the "Just for Two" label fool you, it's more than enough for three or four. Great size loaf to slice for sandwiches too!

A couple of features that are not really highlighted but I find enjoyable is the window that allows me to see into the mixing/baking well. I love it! You see the entire loaf mixing, rising and baking! The other feature I love is the keep warm cycle. If dinner isn't done by the time the bread is, that's ok! It keeps it warm until you're ready to sit down to dinner.

I can't wait to experiment with soy flour and splenda for baking and see if I can make a few low carb but good tasting loafs for my dinners!

First I was worried about how the bread would taste after reading some of these reviews. Well rest assured this will be the best tastiest bread you have ever eaten! I just made my first loaf today and had to rush here to tell how yummy it is! I can't taste the yeast at all. I do taste the sweetness--it requires a tablespoon of suger, for the yeast to feed on I guess. But that does not detract at all. It is a perfect little loaf of bread. The crust could not be better! The size and shape is perfect. I DID use the whole wheat setting as someone recommended here to make it knead the dough a little more. No you do NOT need a thermometer to test the temperature of the liquid, just make sure it is warm. You don't need to shop around for special yeast or flour as some of these reviews made me think. Follow the basic directions and ingredients-bread flour and fast rising yeast-and your loaf will be perfect. But you will absolutely LOVE the taste and texture of this bread. I would not really want to make a sandwich out of it due to the slight sweetness. It is something I would be more inclined to put strawberries and whipped cream on. I may experiment with a bit less sugar, even though I think the taste is excellent. But as an accompaniment to dinner it is just perfect.
Don't even hesitate to buy this! It is so easy a child could do it. And you could not BUY a tastier loaf anywhere, I promise!
Now I can't wait to try some specialty breads-tomorrow!

You will love this little machine. In 45 minutes, you will have a beautiful loaf of bread. House smells wonderful also. I recommend you work on the recipe to get it just right. Use thermometer on liquid (canned milk+warmed water works). Hogsdon unbleached is a high quality unbleached flour I use (not bread flour), less yeast (must use fast acting granulated type) by 1/2 tsp or so and a little more sugar and salt. (The Sugar feeds the yeast and the Salt inhibits its growth) I always use Wheat setting as it kneads the dough more vigorously. Don't cut bread until it cools a few minutes. Butter the tiny paddle so it doesn't stick in loaf (though it's not a biggee if it does). Makes great sandwich bread as well as for dipping in cream cheese or with butter. Happy baking!

I got this little bread machine for my birthday back in February after reading all of the reviews of it here on Amazon. It works well... You can have bread very quickly and the texture is good and clean up is easy. However, I really don't like the taste of the bread it produces. I've tried a lot of the recipes in the booklet, but they all had this weird taste that I think is from all that yeast! A whole packet for such a little loaf. The 2 lb bread machine that I've since inherited doesn't even need that much. But if you want bread fast, flavor is a sacrifice you have to make. Also, you can't really use other recipes. I tried modifying recipes from "More Bread Machine Magic" by Linda Rehberg and Lois Conway, but they didn't work. You can just use the recipes in the booklet that the machine comes in. The booklet is good and has a lot of recipes, but I'd still like something more. I also don't like that the wheat bread isn't really wheat bread because half of it is white bread flour, and the machine doesn't have a lot of baking options. So, basically, if you'd rather have really fast bread than really good bread and only like basic recipes, go with this machine!

I'm no Domestic Goddess, and lived 50 plus years without ever baking a loaf of bread. I'm so proud of myself now! The machine is super easy to use, and the results are great.. I don't understand the reviews that say the bread tastes yeasty.. I love every recipe I've tried, and I'm about half way through the book. The only problem I've found is that my partner and I fight over who gets to make the next loaf!

This machine is wonderful, first because of its 45min cycle, and second because of the small loaf -- perfect for a single person (or small loafer). When I get home from work, I start the bread before the rest of the meal. Everything is ready at about the same time, and the kitchen smells great. This machine has never made a "yeasty" loaf. Perhaps that is because I live in the West, not in the Yeast.

A few things to keep in mind:

1. The machine has only one knead cycle (the big ones have two, but that consumes more time). In short, it does not knead two cycles.

2. Because of the short cycle (and short time for rising), recipes call for as much yeast (2.25 tsp) as a "regular machine" requires for a larger loaf.

3. West Bend means what they say about the water temperature. Until I was comfortable checking the temp with the "pinky test", I used a thermometer. Since the temperature controls how fast the yeast develops it is probably the most important thing in making a nice loaf with this machine. Since I mastered the temperature issue, I have never had a bad loaf.

4. I have successfully adapted recipes developed for a full-size breadmaker for this machine. For me the key has been to not reduce the amout of yeast because the big machine recipes asssume 45-75 minutes of rising, and this machine has only 22.5 minutes of rising time.

5. Shameless endorsement, with apologies to Ross Perot: The raisin bread in the recipe book is "world class".

When following these rules, my bread always has a lovely crust and is never cakey. AND IT'S READY IN 45 MINUTES!!!!! Even my mother is impressed.

The key for me, once again, is to FOLLOW THE DIRECTIONS, especially concerning water temperature and the amount of yeast.

P.S. - if you must have; that is if you positively need, "knead only", put the ingredients in the machine, and when you hear the 22.5 minute beep (the "crust treatment" alarm) unplug the machine and take the dough out.

This is a truly excellent small appliance. It ranks, in my opinion, with the pop-up toaster and the crock pot as significant contributions to civilization. My only complaint is that it won't make kaiser rolls or hot dog buns all by itself.

Put it this way, I bought another and a spare if one ever breaks.
Perfect size and 45 min bake time is awesome. Bread is not completely finished after baking cycle, uless you wait another 15 minutes to let it continue on "keep warm" cycle, which give it a nice crust. However this is actually a blessing. The hole left by the blade on the bottom of the loaf, can be cut out, filled w/ brie and placed in the oven for 5 minutes.
I run 2 of them before dinner parties. Ideal for French bread, I like to use olive oil vice butter.
Only downfall is that you can not overide the "hot element" time out. Hard to exlain, but I use this item manually, adding spices and ingredients to make unique breads during the process. The cavity is small enough to allow that, and you will figure out that you can leave the top open to avoid the elements from becoming too hot, and restart the process if needed.
However if you just want to "plug and play" follow the recipies provided Exactly and you can definitely walk away from it.
Have used my "daily use" bread maker at least 50 times, still works perfect. I am sure that the manufacturer does not recommend dishwasher, but no way I hand wash anything. The bread canister goes in my stainless steel interior dishwasher at sanitary setting. No effect yet on the non stick issue. However I do hand rinse the kneading blade since it has a rubber gasket on the bottom.

->Affordable West Bend 41077 Just For Dinner Breadmaker

I can not tell folks how pleased I am with this "Just For Dinner" Bread Maker. It was delivered at 5:15 PM tonight and by 6:30 I had already baked a delicious Rye bread to go with dinner and the smell of fresh baked bread in the house was wonderful. I have had a full size bread maker for 15 full years and purchased one from a catalog before they had EVER hit the store shelves in America. Most folks at the time had never heard and could not believe such a device actually existed, much less actually take dry ingrediants and turn them into bread.

I became tired of my machine however, as time went on, because of the time it took (4 hours), the size loaf it made, and the time involved in the clean up (kept getting longer and longer and....) Honestly, it was just a hassle and the family never could finish that large loaf of fresh bread before it got stale and always ended up throwing a quarter or a half a loaf away. Over the years, I have looked into another machine, but figured why bother, I never saw much innovations or improvements in them....that is until NOW.

The West Bend "Just for Dinner" maker is just the ticket. I of course read about the 45 minute cycle from beginning to finished product but it was still a joy to behold. The design is extremly simple. I am the type person that believes, the more bells and whistles an item has the better, but somehow, the simplistic design of the appliance was exactly what I was looking for.

I have baked two perfect loaves of bread, and look forward to many more. I would not hesitate to recommend this bread maker to anyone who loves fresh baked bread as much as I do.

I read ALL the reviews (yes!) before purchasing this machine through Amazon.com. It arrived even before the date they said it would and was up and purring that night. I was impressed with all the details in the informational pamphlet and the variety of recipes. I can't say anything negative about this machine, except we might end up eating too much bread and looking like loaves! Please, users, read as many of the reviews as possible, especially the positive ones, for tips. I know I did. I recommend adding 1 teas. wheat gluten for each loaf, following directions exactly, and using some slim, heatproof gloves (maybe the silicon ones they have on QVC.com?) I have a full-sized machine in addition to this one, and found it messed up on a lot of loaves, even when following directions. This little one doesn't; haven't had a failure even though I'm getting more creative. I recommend finding a recipe in the recipe booklet which you're fond of and improvising the next time. For example, I made the cinnamon raisin bread twice, first time exactly as the recipe; the second time I added a teaspoon of rum extract and a little less water. Then I made the parmesan bread recipe twice; second time, instead of only parmesan, I substituted a mixture of half chopped olives and cheese. Tonight we are going to try Stilton or Gorgonzola cheese, maybe sundried tomatoes, and see what happens. In the future I'm going to try making a sourdough loaf. Would be hard to mess up if you watch the mixture during the first five minutes of kneading and find you need a little more flour. The machine starts out slowly before churning around so no flour gets thrown out of it. If you start with a little less flour, you can add more if you find your loaf is sticky. Anybody with negative results needs to practice a bit more and have a little patience!

I bought this small breadmaker over a year ago and I love it. It makes a perfect sized loaf for a meal for one or a few people. And if you need to serve more people it doesn't take long for it cool down so you can make more. The only problem I have is not with the machine itself, but with recipes that made for larger machines, it is difficult sometimes to estimate how much ingrediants to use. Fortunately, it comes with a booklet of many great recipes.

We purchased this since we were tired of going to the store every night for french bread. We were a little concerned about the size, but the loaf of bread that it produces is perfect for our family. It serves 3-4 adults and 1 child perfectly. It is quick, easy and a snap to clean up. We had to toss out our previous bread maker because the bread pan lost its coating and was too hard to clean. We have used a variety of bread mixes and all have come out perfectly. We love this machine - it is worth every penny!

Based on the reviews (actually the reviews are really helpful too), I finally made a decision to purchase this tiny machine as I had two of the normal size bread machines before and they took more than 3 hours to have a loaf of bread and somehow it turned out with some problems and the breads were really awful occasionally. Those were the main reasons why I donated both eventually but now this little stuff is so powerful and all breads turn out beautifully within an hour. I even made my fresh pasta and cookie doughs recently. It is really great!

I have owned 3 full-size bread machines. My husband and I are now empty nesters, so this machine appealed to me. I just made my second loaf and already I'm in love with it. The first loaf was the Old Fashioned White Bread in the manual. It came out perfectly. Next I adapted a recipe I previously used in my bigger machines - Amaretto Raisin Bread. It came out great. All you have to remember is to keep the basic ratios of bread flour, liquid and yeast relatively constant. There's only one rise cycle as far as I can tell, so the texture is SLIGHTLY cake-like. But this is hardly worth mentioning.
For this price I can't imagine why anyone would be disappointed with this little wonder.
