I have been baking bread a long time, sometimes by hand but bread machines are a great alternative. I have had 3 machines, this one is the worst AND the most expensive!! PROS: very quiet, two dough hooks. CONS: 1.)only 3 settings, white, wheat and dough. 2.)rising cycles are too short to allow bread to ferment, rise and shape properly. result is flat bread that is as dense as if you had dipped it in cement. you can program your own times, but you will have to guess what works for this machine and that will mean a lot of lost time, frustration and wasted food ingredients 3.)no extras drop in feature, you have to be present when the beep sounds to add nuts, raisins, which defeats the purpose of "set it and forget it" 4.) instructions are in a poorly translated English manual that does not always make sense (e.g. "add flour and liquids respectably" yes, I know what they meant, but it is like finding the coffee stain on your airline seat tray table--makes you wonder where else they cut a corner) 5.it takes up to 50 minutes to warm up! this brings your bread baking time to almost 5 hours!! ridiculous! 6. the video is wierd, making a big deal about the meatloaf recipe. 7. very expensive 8. and most significantly, it did not make edible bread! I have had inexpensive machines and worked my way up to the alleged top of the line but had better results with the off brand cheap model. I returned this machine and went to Target and got the Breadman Ultimate-- $99.00Breadman TR2500BC Ultimate Plus 2-Pound Stainless-Steel Convection Breadmaker. this is a much better machine. I bought the Zo because The Bakers Catalog raves about it. I did not have a defective machine,it was working as designed-- very poorly. Another alternative is to use a food processor and this GREAT book: The Best Bread Ever: Great Homemade Bread Using your Food Processor I have never had a bad bread outcome using Van Over's book. The only positive thing I can say about Zojirushi is they make the best rice cooker I have used.

To my delight, this replacement model has many new features and performs quietly and efficiently. Even the recipe booklet has been updated with many helpful suggestions. This is the 2nd Zojirushi I've owned. The first one still is going strong after nearly 15 years of use but I wanted a newer one that made loaves that looked like real loaves and not the vertical one the first one made. At mininum I use my Zo 3 times a week. If you want an excellent breadmaker this is the one. There IS a difference in quality and preformance between the under $50 ones and this one.

I have been making all my own bread for the last 15 years. I use a sourdough starter, sometimes making true sourdough and sometimes adding yeast. I prefer to bake my bread in the oven, but rely on the machine to manage the kneading and rising cycles. My old machine's motor was going and it would stop in the middle of kneading heavier breads, so I began shopping for a new model. After reading the customer reviews on the Zojirushi BBCCX20 I decided this was the machine for me. It is TERRIFIC. You can set up your own programs based on the needs of your recipes. It is quiet, kneads very thoroughly, and is generally a pleasure to have.

I bought this machine after having previous problems with a Breadman. This Zojirushi bread machine consistently does a great job. I have learned a few things that might be helpful to others: make sure the position of the twin paddles are both pointing to the side before adding the ingredients to get the bread flour more evenly distributed; also, I measure the bread flour into a separate small bowl and put the fruit/nuts in it and stir it up to distribute before put the flour in the bread pan. (Previous loaves of cinnamon raisin bread had the raisins in a clump because I waited till the machine beeped to put the raisins in). The only thing I would change about this machine is that I would like an interior light so I can see the bread during baking. A wonderful product, and my husband loves all the breads that I can make now.

This is my second Zojirushi bread machine. I had my other one for 8 years but wore out the bread pan. A replacement was too costly so I just purchased another machine. I make bread almost every day but I usually just use the machine to knead the bread or rolls or pizza dough. Then I take it out and let it rise and then bake in the oven. I do make banana bread in the machine though and other kinds of coffee type cakes. It is a great machine.

This is a high-quality well-built device. I have had this machine for two years, there are some patches on the outside of the baking pan, but it works perfectly. If I were to chose what machine to buy, I would buy this one again, however, if I were to decide whether to buy bread machine, I would not buy.
I got this one in hopes to mitigate 3$ cost of bread in Whole Foods and the like and to get a wider variety of breads and a smell of just-made home-made bread. Now machine rests in the cabinet, and I still buy breads at the store.
If you think in the same way I did, well, it turned out that the machine+shipping costs money, products used to make bread cost money (and often time and gas to find them, such things like malt, rye flour, flax seed and other non-basic bread components may not be there in your neighborhood store), and, most importantly, the machine takes electricity (it takes about 4 hours to make a loaf). It took me several tries on different settings to learn to produce decent breads, and the trials also add up to total cost of this adventure. You also need to load it and to clean it, and sometimes be there when it's time to add seeds and nuts.
I was wrong in my expectations of a bread machine to save me time and money. Think about your expectations and current lifestyle. If you have time and the liking to make bread by hand regulary or make yeast-based dough for other purpose, this is a great buy. If your life is hectic enough, have one less thing to worry about and grab your bread at the store. You can also try to make a bread manually, see whether you would trade it to the store bread you are used to, and then decide whether to get the machine to automate some tasks of breadmaking.
I greatly liked the meatloaf receipe, but all the machine does for you is baking. You can just get rectangular cake shape, download receipe from Z's website and make the same delicious thing in your stove.

We are very pleased with our Zojirushi BBCCX20 Home Bakery Supreme Bread Machine. The only thing about it that caused me to rate it a 4 instead of a 5 is that I have had to distribute the dough across the pan during the first rise. It tends to pull to the right. My loaves have had great consistency which I didn't always get in my old Hitachi machine since I use spelt flour. I've seen some reviews in which people didn't like the two paddle holes in the bottom, but they aren't very deep. Not sure what the fuss is. I also like that my loaf is done in 3.5 hours instead of the 4+ it took my other machine. Probably because the traditional shaped loaf has the heat distributed more intensely. A feature my old machine had which this does not is the ability to lock the control panel. Not really troubled about this since my kids are older and not prone to push buttons. Also had times I wanted to change something on old machine and couldn't once locked. Even unplugging it didn't help due to battery back-up. Would definitely recommend this product.

When I originally decided to get a bread machine I took a chance on the Zojirushi since it came highly recommended by friends. I scored one off of ebay for $15 and used it until it finally died after a year's worth of daily whole wheat bread making. One year doesn't sound long but it was a slightly damaged model so I'm not holding the short life against it. We loved the machine so much we immediately ordered the bigger Home Bakery Supreme to replace the old one. It's been a year and we have had no problems. We use it 5 times a week for mostly whole wheat and are very pleased with the results. The quick whole wheat setting gives a nice loaf in two hours. It has great features for those advanced bread makers/bakers. I would highly recommend this machine.

We've had many bread machines but this one is by far the best we've owed. A very nice feature is the warmup cycle. We always forget to take the yeast from the refrigerator - with this cycle you don't have to worry about that. The bread comes out great too. There will be some lopsided breads but I've gotten that in all the machines I've had over the years. And, don't worry if you don't get an evenly browned top - it will still taste delicious.

Okay, that being said: I've owned 2 bread machines prior to purchasing Zojirushi's Home Bakery Supreme. They were flawed, but it was possible via 'work-arounds' to get a respectable product. The HBS is, by comparison, a hands-free machine. I've made bread with it for several weeks now, and can attest to the excellent consistency of product it turns out.
Taste, texture, shape of loaf, ease of machine use, flexibility of options,.. all are far beyond my expectations.
The other day, by following the simple instructions in the manual, I baked up an extraordinarily impressive batch of CROISSANTS. No joke. Not phony, sort-of-like-a-croissant croissants. Honest-to-goodness, flaky, buttery, amazing croissants.
As of this writing, I tend to believe there's no better machine on the market. If I had to, I would purchase this machine again.

I've been using this bread maker for about 18 months now. The best thing about it is that it makes great bread. This is the only bread maker I've ever owned, so I can't compare it to others. However, I'd like to point out some of the weaker points of this product:
- The non-stick coating on the bread pan has become pitted near the paddles, and I'm about to replace the entire pan (they are readily available and cost around $50). In fairness to the machine, I went through a period of making walnut bread, and I now wonder whether it was the walnuts that damaged the pan. And in case you're wondering, yes I did remove the shells!
- If the machine is left to make bread unattended, most of the bread ends up at one end of the pan. I don't make bread overnight, so I'm always here to spread the dough more evenly before the final rise, so this is not a big problem for me. Nevertheless, this does seem to be a weakness.
- There is no way to disable the beep that warns you that it's time to add optional ingredients (raisins, walnuts, etc). I really only want to hear the beep if I actually plan to add ingredients, so there should be a way to turn it off.
- The kneading process is noisy (but I don't know if other bread makers are noisy too).
People who do not eat dairy products might like to know that most of the recipes in the accompanying booklet have milk powder in them. However, you can of course experiment with your own bread recipes.
I chose this machine because I was (and still am) so impressed with my Zojirushi rice cooker. If I were buying a bread machine today, I would still consider this one, but I would be less drawn to this brand than I was 18 months ago.

I waited a while to write the review on this because it's simply not something we use every day. We've had it for a few months now and have made about a dozen loaves of bread. It's our first bread machine so I don't have a long history to compare this to on other machines. We bought it based on the recommendation of a sales person at our local kitchen store, she thought it was the next best thing since..well...sliced bread... :-)
I'm not really sure, but I don't think you can get much easier than dumping ingredients into the pan and pushing a button. This will pre-heat before mixing the ingredients and kneading the dough. It then goes through 3 raise cycles, knocking it down after the first two. A previous reviewer mentioned this makes the bread denser than they like, I personally havne't noticed that much of a difference between 2 raises and 3. Overall the bread is a little denser than what you buy in the store but I like it that way, it also has something else storebought doesn't - taste.
Pros:
Dirt simple to use. My wife and I have never used a bread machine and baked our first loaf before reading the instructions.
Makes a normal 2 lb loaf. Crust is on the top of the bread and not on the end like some of the other machines.
2 mixing paddles seem to do a very efficient job of mixing all the ingredients though we do tend to keep our eye on it when it first starts. We've had a couple times where we had to push some flour back down into the mix because it stuck to the side. Probably something we did though, maybe splashed a little water on the side that made the flour stick.
Cons:
The shafts the paddles attach to are a pain to clean. We haven't found a good way to clean them yet and everything seems to stick to them.
The first several loaves came out with a very hard crust on the bottom that no setting would change. We had to modify the ingredients a little, my wife adds a little extra water and that seems to have fixed the problem.
Overall we're very happy with this machine and look forward to many years of putting it to good use.
BTW:
You will occasionally end up with a Frankenstein loaf that only remotely looks like a loaf of bread. If you can look beyond the lumpiness I've not found the taste to be any different. Once in a while the paddles must leave the dough in a weird shape and resultant loaf looks odd. No big deal, I suspect it would happen in any machine with a horizontal loaf pan.

I've searched extensively for the best breadmaker & Zojirushi's the best one out there--it's had the best reviews on several different websites besides Amazon. I've had the one by Breadman (1 lb loaf) in the early 90s w/c died so suddenly (1.5 month) & have been baking bread by hand since then. Granted, i still love to bake bread by hand, but if I don't have time, Zojirushi saves the day! I've read on some of the reviews that it's hard to clean, it's really not that hard. Besides cooling off the loaf pan, I also soak it in water with dishwashing soap to soften the crust on the edges of the knead blade and/or the 2 blade-bars in order for the crust (& sometimes knead blade) to come off easily. So far I've made 2 loaves of bread (white loaf & raisin bread) w/c turned out just fine but you have to make sure the flour & yeast are fresh (esp. the yeast --has to be unexpired). I also tried the "Butter Mochi" recipe taken from the zojirushi website w/c tasted good, but not ideal for the health conscious or vegans. The troubleshooting section at the back of the instructions manual does just as it says (the way the loaves turn out during/after baking).

I made this purchase based on comments in a cookbood by Lora Brody. Contributing chefs were asked about the electronic appliances they could not do without. Every one listed a bread machine and specifically mentioned Zojurishi. I have tried four recipes and have been pleased with the results each time. I have been baking bread for 15 years and this is my first bread machine. There are recipes that I will bake in the oven but I am pleased with the performance of this product. Guess I'm getting lazy in my old age.

This is my first bread machine. I am a novice cook / baker. I have found the bread machine fun and easy-to-use. So far I've used it about 10 times. I have tried several recipes included with the machine. They have turned out perfectly every single time. My family has been enjoying the bread. It's much better than store-bought bread with all the corn syrup and preservatives. I bought this item as a gift for my girlfriend as she enjoys to bake. Needeless to say I figured buying a bread machine would be a convenience for her not one mess of a hassle for us both. When the machine arrived, we carefully followed the instructions for a basic wheat loaf. The result was something that didn't rise and certainly didn't resemble a loaf of bread. Returned, got a replacement. The next machine rose the bread higher, however this time the ingredients didn't mix well, it was doughy and looked like a piece of well I'm sure you know what I'm getting at. Between the two machines we tried at least 5-6 times to create bread and everytime the result was nothing i would ever pay $200 for. The entire experience removed any confidence i had in Zojurushi and bread machines - I just don't see how they could produce a half decent looking loaf of bread anymore. While the no hassle return/refund practices of Amazon were quite impressive this experience was a thorn in my side and my gf's for over a month - certainly not what I was going for in a Christmas gift. Maybe you'll have better luck though (?)

This machine was a disappointment for the price. I use a bread machine once per week and have been using a machine for ten years. I bought this 6 months ago and have had many mishaps.
First, the mixing paddles don't always stay in place and I have to set a timer to "check" the machine when it starts mixing to make sure the paddles are both working. This means I can't use it overnight or leave it. This has happened about 25% of the time. Trust me, I'm very careful now and it still happens. A related issue to the paddles is they don't lock down well and are so lightweight so they always get stuck in the bread and are extremely difficult to remove. Bread is always cooked under the paddles in sufficient quantity to have to rip the loaf to get the paddles out.
Second, the crust control only works on Basic. It may as well not be an option since I don't use that mode. All my multi-grain/whole wheat are too light crusted for my family's preference. I didn't realize this limitation from the description.
Finally, the major disappointment is the loaf shape. Since the paddles both turn in the same direction, the dough all tends to stray to one end of the pan, leaving one side of the loaf small. This makes for an aesthetically unpleasing loaf (the whole point of the horizontal machine?) and a dry/overcooked end. I guess I'll be setting another timer to push the dough into place after the final rise!

This is about the 4th breadmaker that we've had. Our first one was a Zojirushi (S-15, I believe), and it worked flawlessly. After several other, cheaper brands, my wife decided that she wanted another Zojirushi, so we purchased this one. Results have been much less than satisfying, with most of our bread coming out poorly mixed and unrisen. We called one of their authorized service centers, Alexandria Appliance Repair, in ALexandria, Va., and they were rude and obnoxious and refused to honor the warranty. I have since found out that they have an unsatisfactory record with the BBB. Anyway, we contacted Zojirushi tech support and they said that the measurements in the recipes are inaccurate and the flower needs to be weighed. They also suggested that we manually "help" during the mixing stage because the bread machine apparently doesn't do that correctly. A $60 Sunbeam machine runs rings around this $200 piece of junk. Don't waste your money on this one.

This machine works quite nicely. To get the exact texture of the bread using their recipies you might want to experiment with some of the ingredients. If you use the dough making feature any personl recipies work quite well. Just remember that the water goes in first - the machine preheats it in their baking process.

This is our fourth bread machine in 15 years. Our last was the Oster, but it did have some limitations that we were looking to correct. The BBCCX20 has 2 paddles, a better shape for the loaf, and the programmable feature is awesome. It seems to be built well. The bread pan is much easier to install and remove when the loaf is done. At double the cost of an Oster, for the features and durability, we are quite satisfied with the purchase and would recommend it to anyone who is in it for the long haul. We make our bread 2-3 times a week.

I am a 'natural yeast' bread maker. AKA: Sourdough. All methods in this machine's manual that refers to sourdough, is not referring to 'natural yeast'. It's mostly referring to a sponge that needs to be fermented and a sponge can be made with commercial yeast or natural yeast. In order to use the full potential of this machine with methods of making natural yeast bread, the Home Made cycles and programmablity is just what I needed to help me make a soft, sandwich loaf of naturally sweet smelling and tasting bread. Just water, bread flour (or combination of bread and whole wheat) and salt. You can program the machine for Rise1 for up to 24 hours at around 80 degrees F. Normally, I'm looking for my warm spot and this moves as the days get warmer or colder. Rise at room temperature can take anywhere from 4 to 10 hours and you run the risk of over rising if you run to the store. I maintain a Counter Starter of natural yeast and it is ready to make bread dough every morning. I can mix dough in Quick Dough Cyce(with no preheat) in 36 minutes. Remove dough from pan and remove the paddles and clean up any dough remaining. Shape the dough into a rectangle and tuck under the ends and plop it back into the bread pan and spray with olive oil and put in the machine. I cut a cover to fit the top from plastic cover for microwaving food and this keep everything moist while rising. (This same plastic cover can be put over the pan when kneading and flour stays in the pan - so it will keep flour out of other parts of machine) Used the Memory1 to rise for 5 hours; but set my other timer for 4.5 hours because that how long it's taking to rise bread about 1/2 inch below the top of pan. Memory2 I programed to just Bake for 60 minutes. So after bread has risen, I take the plastic top off, go to Memory2 and select light crust and bake for 60 minutes. I have tested the temperature of bread right after finished baking and it was a perfect 210 degrees F. The top was a little light, so I can pop just the bread (no pan) it into a cold oven and baked it for 5 minutes and brown the top a little. So what was that? 36 min. + 4.5 hours + 1 hour = a little more than 6 hours. My other method (trying to get dough to rise in my warm spot) is so unpredicable that you just do not know when the bread will finish rising. For just this alone, I highly recommend the X20 as an amazing tool. This was not a hands off process; but it has been very reliable in the five loaves I done this way.
I've not made any other type of bread yet; but with the two kneading paddles and regular type loaf pan, I think the consistency of the dough needs to be softer, so it will spread out. My old bread machine has a vertical pan, so it has no where else to go but up. I will probably have to add more water to my old recipes to keep the dough from rising lop sided. When I was mixing the natural yeast dough in the X20, if machine was making a knocking noise, the dough needed a little bit more water. You can get away with a softer dough because the sides of this pan are really high. This means your bread is supported by a form all the way. You do not want the bread rising out of the top.
Enough said. Hopefully, this machine lasts as long as my last Zojirushi (12 years and still kicking). It's not difficult to program the Home Made Memory; but I would you suggest writing down what you need to do. If you use all 3 Memory up and need to do something else, you have to wipe all 3 and start over. Maybe more memory cycles are needed.
Gosh, my only wish would be that they add a Yogurt cycle, then I could finish making yogurt (needs 108 degrees F constant for a few hours) in the bread machine. ;o)

Not all of the loaves have come out perfectly shaped and beautiful, but the texture and taste are excellent. I have a lot more experimenting to do with different bread recipes and other features, but so far, so good -- I am pleased with my purchase! The delay cycle is fun to use for hot bread in the morning. I do love the ease of just adding the ingredients to the machine, turning it on and coming back to a fresh loaf of bread. It takes all of about five minutes time on my part. Read the instruction manual, use bread flour and follow the recipes for best results. I purchased the Better Homes and Gardens bread book as well as the Betty Crocker bread book. Both are good.

I find that the Zojihrush bread makers are the best...have not found any better...have owned the smaller model for many years, and it has performed beautifully for me...I now wanted to try the newer model, making a regular sized loaf of bread. It works great, although I would like to have more recipes for the 1 1/2 pound loaf. I will have to experiment more to convert my old recipes to use in the new machine. Adding the ingredients to the pan is a little confusing to me...because usually you add the water, butter, sugar, salt then the flour and ending up with the yeast. Do not understand why the flour is the first thing added to the water, and really if it makes any difference at all which ever comes first. Anyway I like the Zojirushi bread maker as well as other Zojirushi products.....

I decided to buy a bread machine when my doctor told me that I was showing signs of becoming a diabetic. I did research; the horizontal loaf and the reported quiet of this machine lead me to make the investment. The machine is quiet as reported. The horizontal loaf makes slicing easy.
The machine is very easy to operate. Although a beginner, I immediately started experimenting with whole wheat recipes and, on my third try, came up with a great stone ground whole wheat recipe using a little fructose and Splenda, which rose fine and tasted great. My next experiment is to come up with a recipe for stone ground whole wheat pizza dough.

Nice dough mixer, but the full cycle bread is under cooked, have to stick it in the oven to finish it. However am on a learning curve, advised to use less flour. I have noticed that the bread gets moldy after a few days, so "use it or lose it" and or stick it in the freezer.

I love this machine! I've have made several loaves wheat and white. It makes a perfect loaf everytime. I bought the "The Bread Lovers Bread Machine Cookbook" and used the recipes out of it and they turned out just as good.
The price of the machine was a little high but it was worth it. I'm am very pleased with my bread machine. I bought two machines before this one (they were cheaper) and they didn't make wheat bread, it just didn't turn out at all. The machines were returned. Making my second loaf as I type this. Although I can't say "I've used it daily for the last 80 years..." I can say that I mill my own flour and that has made it really hard to find a breadmaker than can tolerate the difference. I made a loaf last night and it actually looked like bread bought from the store. The bread was so good! I used it as sandwich bread today, and was just thrilled! I have owned a Zojirushi bread machine on one sort or another for the last 11 years. The first one lasted 8 years. I was so impressed and could have even ordered the part to fix it but it would have cost me almost as much as the original price on the machine.
So I purchased the BBCCX20, thinking I was getting another class act. Apparently, the trend to produce poorly made products, in order to force another purchase in a few years, has taken root with this company.
Sadly, I am today looking for a replacement after only three years. There is not a prayer for the old machine. The heating element which is sealed and encased in the machine has died.
I will say that I received good consistent loaves of bread but this machine has a major drawback. It is very hard to clean. I would have to soak it overnight to remove the paddles and then soak some more, leaving me with the ability to only bake a loaf every other day at best.
So, if you have money to burn and enjoy having a dirty pan out on your counter for two days, please, buy this overpriced brand.

I received my Zojirushi bread machine tonight and tried out a sweet white bread recipe that I found online. The bread came out incredibly moist, soft and tender in the center and nice & crusty outside.

Zojirushi rules! The two-paddle system yields a better "crumb" because it doesn't beat the ingredients to death before baking like the Breadman Ultimate, and the heavier-duty pan provides a lighter, crisper crust even on the "Dark" setting.
Overall construction is much sturdier than other machines I've used (been doing this for years!), and I can well believe folks are getting ten or more years out of their Zojirushis -- which makes the steeper initial price a whole lot easier to swallow: Per year of use the Zojirushi is the much better value. It's quite a bit quieter than the Breadman, in large part because it isn't constantly slamming the dough ruthlessly against the sides of the pan and making the whole assembly rattle.
The recipes included are extremely tasty, especially the pizza dough -- which, baked on the lowest oven rack at 500 degrees atop a Lodge Cast Iron Round Griddle will tempt you more an more often to forego the joys of your favorite pizzeria in favor of Doing It Yourself.
For those of you who live at higher altitudes, the Zojirushi will give more consistent results in rise and a better hedge against collapse. Again, this is partly a function of the less-strenuous kneading; but something about the pre-heating and the heavier pan and the heat delivery system itself means you can trust the machine to turn out great loaves when you haven't the time or inclination to pop the dough out, put it in a regular bread-pan or shape it into a round or braid for oven-baking.
A two-pound loaf is a bit much for me and the wife; in fact, with the two-pound recipes listed, the loaves weigh out at more than two pounds; so a little simple proportional ingredient-adjustment to achieve that perfect pound-and-a-half puppy is well worth the effort. Here in Albuquerque, a 1-1/2 pounder loaf of whole wheat (use graham flour -- yum!) requires only 1 tsp. of regular active dry yeast (NOT fast-rise!) to produce a monstrous-pretty, golden, well-rounded masterpiece.
Clean-up's a breeze, and I haven't yet had to pry a paddle out of a loaf of hot bread.

I purchased this unit in hopes that it would be quieter than my (very old) B&D unit. Sadly, it is incredibly loud, as if a hammer were being beaten on the inside of the machine. I feel this is due to the design of how the pan is removed: by tilting forward, then lifting out. This poor design decision makes the pan tilt forward during the mixing cycle and "beat" against some restraint under the pan, thus producing the hammering noise. (When I hold the pan down firmly during the mix cycle, the noise abates.)
Also, the paddles do not fit snuggly around the driveshafts, and "cam" back and forth loosly as the shafts spin. This causes the edges of the shafts to gouge into the paddle hole sides, which will eventually ream out the paddle holes such that they cannot grip the shafts. I can't believe they shipped the machine with these flaws.
Other than these faults, it makes great bread.
And when will manufacturers realize that when people set the machine to start overnight such that they can wake up to fresh bread, they DON"t want to be woken by the "add ingredients" beeper????????

I have had my Zojirushi for about a month. I have made white bread, white raisin bread, about four kinds of Whole Wheat from 30% to 100% Whole Wheat flour and all have been total successes.
We keep the temperature low in the winter to cut down on the heat bill. Our old bread machine was a complete flop unless the room temp was at least 70 degrees. The Zojirushi with the pre-heat feature doesn't care what the room temp is. It turns our perfect loaves no matter what.
This machine was expensive, but based on past bread machines we've owned, their initial price and failures, I must say the Zojirushi is cheap at the price. If price is the only thing keeping you from buying this machine, bite the bullet and buy! You will not be disappointed.

I used to own a low-end bread machine and found that it stayed in the cupboard while I continued to buy bread at the store. Why? It was tricky, unforgiving and 1 in 5 loaves was a good loaf (and I am being generous on the numbers!).
I recently moved to the US and found the sugar, honey and corn syrup additives in US store-bought bread unpalatable to say the least! (I still do not understand why the packaged breads are sooooo sweet - it is like eating a tuna salad sandwich on a slice of pound cake!) I made the decision to invest once again in a bread maker, but was sceptical because my old machine was so difficult to get decent bread out of. A teaspoon of flour either way, or a few drops of water either way, or a few grains (!) of salt either way made the difference between a reasonable loaf or something akin to a brick that was only useful for housebuilding.
So, I read the reviews for the Zojirushi and looked at the rather hefty price in comparison to some other machines ... and then I read the reviews some more and mulled it over and looked at the price a few more times... Then I got brave and decided that if people took the time to review a product I should take on board the comments - I am glad I did.
RESULTS:
This machine is so forgiving that if your ingredient measurements are not entirely accurate you still get a perfectly good loaf.
I have had to adjust the recipes to take account of altitude (and the recipe book even tells you what those adjustments are!) and I still get perfect loaves. Tastes great, texture is wonderful and NO CORN SYRUP!
PAN:
It is easy to use; the bread pan is of excellent quality - if you let it cool to cold before you clean it, never use metal in it, and don't use abrasive cleaners or scouring pads then it is an incredibly non-stick surface and I see no reason why it would deteriorate.
DOUBLE PADDLES:
I too was sceptical about the potenital for double the paddles to do double the mangling! My old machine used to make a real mess of the loaf and I generally had to remove the paddle forcibly from the bottom of the bread. The paddles on this machine leave the loaf by staying in the pan as it is turned out (remember to treat the paddles in the same was as you would treat the pan) and the holes it leaves in the bottom of the bread are pretty unnoticeable, particularly when you slice the loaf. It certainly doesn't affect the shape of a slice in my opinion.
USE:
I use mine every other day; it lives on my counter-top. I never buy bread from the store and fully intend to use it for cakes, jam and the rather fun meatloaf setting!
RECOMMENDATION:
I know that the price is a bit off-putting and I know that you are probably as sceptical about reviews of products bought on-line as I am. However, the machine has written this review for me (figuratively speaking of course - it might be clever but it isn't THAT clever!) and I have no other reason to write this review other than to give credit to an excellent machine.
If you genuinely intend to use a bread machine frequently then it is worth the extra money. If you genuinely prefer fresh-baked bread to store-bought bread then it is worth the extra money. If you have used a cheaper machine in the past and want one that works for sure, then this is definitely worth the extra money... If you are looking for a bread machine to grace your counter-top and smell good once a year, buy a cheaper one!

NO Aluminium, and no non-stick coatings. The baking basket is either aluminium, or it has a so called non-stick coating. This is what makes this machine a no buy in my book.
Of course those who manufacture aluminium cookware, and non-stick coatings downplay and health harzards but on the other hand so did the Tobacco Industry. So I therefore stick to steel, or iron for cooking purposes, regardless of the nay-sayers.
I would like to have a bread maker with a steel bowl, and without the so-called non-stick coatings. So my review is for the health conscience, and therefore one star.

We got a bread machine because my daughter has celiac and needs to eat a gluten-free diet...so any bread she eats, we make. We needed a machine that supported gluten-free recipes - most gluten-free doughs do not need multiple kneading/rising cycles, so the 3 programmable cycles of this machine are great for adjusting as needed. We have tried multiple brands of gluten-free bread mixes and they have come out beautifully. There are also some gluten-free recipes on the Zojirushi web site, but we haven't tried those yet. The machine is easy to learn to use and cleans up easily as well. We are very happy with it so far.

We've had our Zo for about a month now. Looked at all the reviewed machines I could find. The Zo reviewed the best and, so far, it has lived up to the promise. The machine is relatively quiet, easy to clean and simple to operate. We've made around 12 loaves so far. Only 3 of the first loaves could be considered moderate failures, the rest have turned out just fine. I started with the recipes in the Zo manual but have moved on to "The Biggest Book of Bread Machine Recipes (Better Homes & Gardens)". The Zo does a great job of controlling all of the mechanical variables that go into bread making. If the bread fails, something that went into the pan probably wasn't right. That's the biggest thing I learned from all the reviews - don't immediately blame the machine for a bad loaf - look at the results, figure out what went wrong (the Zo manual has a great chart) and adjust your recipe next time out. If you aren't getting nice, high loaves - try a tablespoon or so of vital wheat gluten. Beth Hensperger recommends it in "The Bread Lover's Bread Machine Cookbook", and I've found it to work wonders. Hint for lopsided loaves - put the kneading blades in pointing opposite directions. Buy your machine based on how well the feature set fits your needs. I love that my family can have fresh, chemical-free, homemade bread in a few hours with no flour covered counter-tops and only a few measuring utensils to wash. That ease of use has opened up a world of possibilities, and really made it difficult not to bake a loaf a day. I've found about 50 recipes that I want to try, but there's no way we can eat that much bread. If you want to bake your own breads but don't have 6 hours to invest each time out, buy a Zo.

I wanted to like this product -- really. After all, a $200 bread machine SHOULD be great, when most are well under a hundred. I bought this when I thought my 10 year old Hitachi was broken; it later started working, and I have gone back to it instead of this machine. I would have returned this product, but you only have 30 days to make a return with Amazon, and I was still testing it out -- hoping it would work. Plus, the cost of returning it would have been quite high. So, I'm stuck with a machine with many problems, most of which are inherent in the design (and not a product failure). First, the idea of a horizontal loaf with two blades seems good, but in reality, the Zo loaf is the same size as my Hitachi vertical loaf. Furthermore, because there are two blades, now the bottom of every loaf (and consequently, almost every slice of bread) is ruined by where the blades were. When combined with the indentations on the sides of the pan, the result is bread that you can only use at home -- not for guests or gifts.
My other issues:
*The motor/blades are quite loud, and the bread pan clanks and moves when mixing.
*The "add" beeping feature is also loud, and makes it impossible to use overnight.
*There is no crust control setting except for the basic bread (i.e., you can't change the crust to "light" in the wheat setting).
*The top consistently does not brown.
*The loaves are consistently lopsided. Again, this appears due to the "dual" blade feature. Sometimes the dough ends up on one side of the pan, and stays there during baking.
*The blades do not mix the materials at the side of the pan well. I usually have to scrape the sides while mixing.
*The bread is difficult to remove. I never had this problem with my Hitachi.
*There is no indicator if you don't have the bread pan properly inserted. So you might end up with a cooked mass of unmixed ingredients. My Hitachi has a "bread pan" indicator if you don't get it inserted all the way.
If this were a $60 bread machine, these problems might not seem so bad. But for a top-of-the-line machine, it was very disappointing.

My son is sensitive to gluten. That means I have to bake bread 1-2 times a week for school lunches. I like that I can program the Zojo according to my "kneads". My bread finishes baking in about 2 hrs instead of the 3 1/2 hrs with my old machine. I've only used it a few times but I've met with good success each time. Sometimes the sides and bottom come out darker than I like but the top is light so I still have to play around with the crust control. The bread comes out easily from the pan and looks more like a "loaf" than my old tall bread machine. Also, the turning blades do not get baked into the bread so I don't have to burn my fingers digging them out. The metal pieces that the blades attach to are sometimes tricky to clean but not horribly so. If you're not sure you will be using it much, you may want to go with a lower-priced machine to start with. My first machine was well under $100 and worked just fine. I was willing to pay the higher price because I knew I would be using it a lot. It's programmable, which is nice for making gluten-free bread. Overall, I really like my Zojo.

We had a Breadman machine for 8+ years. Recently the pan started leaking water and we decided it was time to buy a new bread maker. We read the reviews and decided that the machine had excellant reviews. The first loaf of bread I made came out ok. I used a bread mix. The second time I tried it, I didn't get one of the paddles on correctly so it didn't mix the entire pan. The third time was the "charm". The bread was wonderful. I've used several of the recipes from the Zojirushi guide and have had great luck with all of them. This machine is amazingly quiet, especially compared to the old Breadman. I had an earlier (tall design) Zoji for years and it made terrific bread. This model also makes a quality loaf. You get what you pay for. I tried a less expensive but widely sold machine. It had plenty of features and adjustments, but it was very noisy and the bread always lacked character and tasted "doughy" (regardless of adjustments) while in the Zoji, the same recipe produces a better loaf than I could in the oven. You won't regret the extra expense....my experience.

I'm very happy because of Zojirushi BBCCX20 Home Bakery Supreme Bread Machine. Every Saturday morning my family can enjoy delious and fresh bread in my home. For the first time I considered three different brands like Panasonic, Cusinart and Zojirushi. Zojirushi is the high price compared to the other brands. However it has 2 paddles which mixes and kneads better than having just 1 paddle, and it also has various function like dough, jam, bake, quick cycle, pre-heat cycle etc. I usually used the light crust, and the texture of the bread is very soft and taste good. Ah! One of the best things is the bread shape and texture. Zojirushi makes bread more like store bought bread. Any of the other breadmakers I have considered has the vertical shape not wide shape. My bread comes out of the breadmaker nice and rounded on the top. I know it is expensive than the others, but it is worth it. I highly reccommend this bread maker, it is awesome!!

After years of struggling with an inexpensive bread machine that made a bizzare loaf in the shape of a coffee can, I am thrilled with my ZO!! I have had it for one month and make a loaf of whole wheat bread every single day. It easily handles the freshly ground whole-wheat flour and produces a lovely dough with great texture. I have baked the bread in the machine and it came out perfect - in a functional shape for sandwiches, toast, etc. I have also used the quick wheat dough setting to make rolls, pizza, calzones, and cinnamon rolls. I can't say enough about how wonderful this machine is and what a help it is in feeding my large family healthy whole-grains!! We use our Zo to bake whole wheat bread, and I find it remarkably consistent. My first loaf failed - but with the trobleshooting guide in the back of the owners manual, I now know why. Since I made some slight adjustments to my ingredients, every loaf I've made has been perfect. I use the homemade settings, which allow me to tweak to my heart's content. Others have mentioned the lack of a light for the viewing window, but it doesn't make any difference to me. I can see just fine in there. I would highly recommend this machine to others!

I'm now the proud owner of a Zojirushi Breadmaker! I have owned 3 other brands, but Zojirushi beats them all. These are the things I like: It has 2 paddles which mixes and kneads better than having just 1 paddle. It has a pre-heat cycle that gets the ingredients to the perfect temp. I have tried the light crust and the medium crust and my husband likes them both. I like the texture of the bread, it makes bread more like store bought bread than any of the other breadmakers I have used. The best part is: The texture is so wonderful you can slice it to make sandwitch bread! Living in Utah cutting the yeast back to 1 1/2 tsps is perfect. I bought the Zojirushi BBCCX20 a couple months ago, and have really enjoyed how exellently it works. I owned one other bread machine previously and it was OK, but this one is far better. The texture of the bread is far superior and it can be left to do its thing, without having to worry about whether it is mixing the dough sufficiently etc.. The two paddles make quite a difference. With my previous machine I always had to watch it and kind of help it along till it really got going. Also, the Zojirushi handles the larger 2lb loaves much better (even though my first machine claimed to be a 2lb loaf machine it never quite did it right, and the top of the loaf invariably hit the lid, causing doughy, unfinished product). Also, the Zojirushi works quietly, in spite of its strong motor, which makes it pleasantly unobtrusive. I highly recommend the Zojirushi. We have been using another bread maker for well over 10 years and have been familiar with the process. After some early failures with several loaves, we discovered that the flour was the culprit. They now date all flour packages. We also found that contrary to what the video said, regular all purpose flour has work better than the specialized Bread Flour.

My husband and I make all our bread. This machine is superior to previous ones we have owned, because it makes a real loaf of bread, not some rounded glob. It is very quiet when running, unlike previous machines that could be heard loudly all over the house. The bread pan and paddles are very sturdy. This bread machine does a great job. The loaf size it makes it normal, so it goes in the toaster fine and makes regular size sandwiches. I actually make all my own bread, and all gluten free bread. I have always been successful with this machine (if I don't mess up the recipe). The programmable feature is nice, too, if you want to tweak any details. I find the regular cycle works fine.
I have never had any mixing problems as I have with the one paddle machines (this machine has two paddles).
The dough cycle works well, also. I have made a lot of regular flour bread to dough and then frozen the dough for later use. Works great!

never baked bread before, got what I thought would be the best, so I have no experience with any other bread machine. This works pretty well even for a kitchen klutz like me: bread comes out pretty well with only an occasional bobble, usually on review attributable to me and not the machine, though a few times i didn't know what the heck happened.(have baked ~75 loaves: 5 bobbles, 2 had to be discarded) Have not yet used the fancier features, and again, I'm no expert. but I am satisfied.

I have used this bread maker now for a lot of different recipes. If I used a recipe from a different bread maker book, the loaf did not turn out. The recipes from Zojirushi's book have turned out and the loaves are tasty and texture is good. The machine is loud when kneading. Overall, for the price you pay for this machine, I have gotten just as good of bread from other machines I have had in the past.

I'm not a bread making pro but we are bread eating pros in this family. A nice loaf can often make or break a meal. This bread maker is easy to use and makes an excellent loaf of bread. Just follow the directions. If you are tempted, as I often am, to experiment just make sure you read and understand some principles in bread making. If my experimental loaf does not come out as well as I wish, I refer to the manual's last pages where suggestions are made. They really work well.
The Zojirushi is easy to use. Its not as quiet as I was lead to believe but its certainly a lot quieter than my former bread makers. The directions are easy step-by-step directions and the troubleshooting section at the end of the manual is awesome for perfecting your loaves. The bread comes out as good or better than bakery bread in both appearance and especially taste. This machine really makes it easy while allowing for your own creativity. Just put in your ingredients in the required order, press the darkness level and then start. Sit back, relax and in about 3 hours you will smell a fresh loaf of bread baking. The loaf is comes out in the shape of those in the store.
The Zojirushi makers forgot to add a substitution list to the manual. For instance, I use real milk, not powdered milk. The manual tells you this is fine but fails to make the conversion from water and power to liquid milk. The other upgrade they could make is to allow a pause for better rising of heavy loaves. Finally will someone tell this company to pack the video in DVD format. What is it with this ancient VHS format movie. I have not been able to view it. lol
If you are truly a novice, like me, willing to follow directions and read the directions, principles and hints prior jumping into that first loaf you make perfect bread of your choice each time. I strongly recommend this bread maker for the average or novice user.

So far I have been very happy with my Zo. I agree with others about the low baking temp...on med., my bread was much lighter than expected, but I wouldn't go so far as to say the loaf was undercooked. It was well formed and airy, just looked like I had baked it on a lower setting.
Oh, but the shape of the loaf was perfect...looked like it came from a bakery (except with paddle holes on the bottom). The two paddles worked great, much better than my previous breadman and kenmore-no more scraping the sides-Ever!
As far as needing more control, not sure why you would buy a bread machine at all. With my previous machines I only used the dough setting and baked in my own reg. oven...they weren't capable of baking an edible loaf. This machine does offer the Home Made settings that allows you to control rising time, kneading time, etc. If someone needs more than that, just make the dough in the machine and let it rise on your counter to your hearts content...hard part is done by the zo. Let's face it, if we were professional bakers, would we be buying a bread machine at all?
Bottom line-the zo is an exceptional bread machine that offers more versatility than most, creates an attractive, well formed loaf, does a wonderful job of mixing the ingredients thoroughly with the two paddles, extremely easy to clean, and the zo has made it extremely easy to remove the pan-pull forward and slide out. I used to wrestle forever with my last one.

I baked six loaves in this machine. I have been using various bread machines for the past 12 years and feel comfortable making adjustments when things don't turn out just right. My big complaint with this machine is the low baking temperatures. Even on the darkest crust setting and the longest baking time (70 minutes), my loaves were only marginally acceptable - they were not sufficiently baked. I was using a nearly-whole wheat recipe. The machine was quiet, strong, and had a lot of bells and whistles, but with only partially baked bread, I had to return it to Amazon. Amazon shipped it to me in a very poorly packed box which was gaping open when it arrived, but they included return labels which made it a cinch to send back, and were quick enough with the refund.

This is my third bread machine. My first was the original Zojirushi, and the second was a Breadman. I still use both the Breadman and the Zojirushi BBCCX20. According to most baking sites I've seen, the Zo and the Breadman are the leading contenders in this category today, so here's my comparison:
- The Zo is more solidly built and has a stronger motor. It can handle stiffer doughs that literally stopped the motor on my Breadman.
- The Zo is much quieter than the Breadman. The pan in the Breadman clanks around in its clips and makes quite a racket during kneading.
- Unfortunately, the Zo has an annoying 15-second beep to signal the right time to add nuts or fruits. As far as I can tell, there is no way to turn off this feature. For me, this is a big deal, because I used to love to set up my bread machine to make bread during the night, giving me a wonderful hot loaf of bread for breakfast. With the 15-second beeper, which sounds a lot like an alarm clock, using the Zo BBCCX20 overnight simply isn't an option. I wish there were a way to turn it off.
- The double paddles on the Zo do a better job of mixing ingredients without the need for scraping down the sides of the pan.
- The Breadman is a much more flexible machine. It's "Pause" button let's you add 15 minutes at any point in the cycle. Without the ability to pause, the Zo sometimes starts baking before the loaf is fully proofed. With bread, where the length of the rise depends on so many factors, having the flexibility to pause during a cycle is very valuable. You can program custom cycles on the Zo, but that's only a solution if you know in advance that your loaf is going to take some extra proofing time.
- Crust control is better on the Breadman. Even set on "light" crust, the Zo tends to produce a dark crust with breads that have a lot of sugar.
- The Breadman has a small bin that automatically dispenses "add ins" (fruits, nuts, etc.) at the right point in the cycle. You just load it up at the beginning of the cycle and the "trap door" releases the goodies at the right time near the end of the kneading cycle.
In a nutshell: The Zo is a better built, more powerful, quieter bread machine. It's solid, reliable, and great for doughs that would stop a lesser machine. The Breadman, on the other hand, provides much greater flexibility to make changes to the cycle once you've started and to get the crust you like. It also has an automatic fruit/nut dispenser and no long, annoying beep. If Zojirushi and Breadman would combine the Zo's motor and mechanics with Breadman's control panel and programming, they'd have the perfect bread machine. As it is, you have to choose based on what's most important to you.

I bought this breadmaker because I wanted one that makes a normal shaped loaf. It makes great big loaves and is relatively easy to use. Just be sure to follow the instructions carefully and I recommend that you use the recipes created for the machine unless you are a baking pro.
Nothing smells better than a homemade loaf of bread baking in the kitchen!

I've been using my Zojirushi for over two years now and make at least a couple loaves of whole wheat sandwich bread a week along with fancier breads using the dough function. I love the fact that there are two paddles to knead the bread, this works so much better than my machine of 10 years ago with just one paddle which often left gobs of unkneaded incredients. I also really like the horizontal full loaf pan. You can make normal sandwich loaves with this design.
The one thing that could be improved would be to add more user control to allow a baker to set all the resting, rising and baking times individually. Sometimes I want the dough to rise longer than the preset times but there's no way of overriding it. Oh well, guess nothing is perfect.
I highly recommend this product.

I have had 4 different bread machines, all of them had the single paddle upright loaf style. I didn't mind the bread they turned out, but I didn't like the loaf shape. My prayers have been answered! I can't quit making bread now! The loaves come out perfect, and if they don't I have come to relize that with bread it is typically the COOK's error, not the machine's. You need to really read the directions, which I find most people don't. If you are going to spend this kind of money on a bread machine, you better be willing to spend some time getting used to it. I've made all kinds of sweet, sourdough, french, italian, herb and cheese, fruit, and beer breads in the machine.....you name it, and they all come out just fine. If not, I tweak the recipe, I don't blame the machine.
All in all, an excellent product. This is my favorite bread machine so far. The only down side is the sourdough setting. Don't be fooled... the light sourdough is made by adding vinegar. For true sourdough, you have to wait the 7-10 days. But if you can't wait.... Oh, and the "big viewing window". Unless someone installs a light inside the machine, you can't really see what's going on anyway. After my first 50 loaves I will let you know how it's holding up!

I own the zojirushi bread machine for about a year. I bake 1-2 per week. The machine makes excellent bread & dough. I haven't bought a loaf of bread since I bought this machine. When I want a more crusty bread, make pizza, or make a foccacia I use the dough cycle with amazing results. Highly reccomend this product.
P.S. It takes a little practice, if you never used a bread machine before.
Read instuctions carefully & measure ingredients. If your bread is slopsided watch for drafts. Most of my breads come out looking picture perfect & the taste you can't compare it with store bought bread. Plus, no preservatives or additives of any kind.

I bought my bread machine a few weeks ago and I use it every day. The white and rye bread recipes turn out perfectly every time. I've also made an apple cake and two meatloafs. I've never been a cook and definitely have never baked a loaf of bread before ... but now that my kids are grown up, I now have some time to work in the kitchen. I highly recommend this machine.

Within a few weeks of purchase the teflon in the Zojirushi pan started to blister and flake off. This is NOT the result of customer abuse but a manufacturing defect.
This is my third (and final) bread machine. The first two were Breadman Ultimates. I should note that I make bread in the machine about 6 times a week on average, pretty much every morning.
The first Breadman worked for over a year until the teflon in the pan started to fail. This was probably my fault for allowing the pan to soak for extended periods of time (water can get behind the teflon and ruin the bond).
I bought an new Breadman Ultimate because the entire machine was only slightly more than the pan alone and the old machine was starting to have mechanical problems. This time I took extremely good care of the pan (letting it cool down, no soaking) because it's clearly the weak link in the system. Within 8 months the stirring shaft that drives the paddle in the pan simply fell out. Whatever the detente mechanism was that holds the shaft to the pan failed, making the machine useless. Currently it doesn't seem very easy (or even possible) to buy a replacement pan for the Breadman.
At this point I was done with the Breadman. Much as I didn't want to spring for the extra money for the Zojirushi, and realizing that my default augmented sourdough recipe probably wouldn't work the same in the new machine, I didn't see an alternative and got one.
Within 3 weeks the teflon in the Zoji pan formed two blisters. One is bit smaller than a dime and all the teflon at this spot has flaked off; the other spot is blistering but the teflon is still intact. I have been extremely careful with the pan: I wait for it to cool and then remove the baked-on bread under the paddles with warm water using mostly my fingers. I don't let it soak at all. This is clearly a manufacturing defect.
I have further complaints with respect to this machine as compared to the Breadman Ultimate:
1) The top of the bread rarely gets brown. I've added more sugar to the recipe which helps slightly but not much.
2) I don't understand what the crust control option does. It doesn't seem to increase baking time which it does on the Breadman so it doesn't make much sense.
3) The programmability is very weak. On the Breadman you can take any of the existing standard options and modify them as well as make up entirely new programs.
4) The programmability options are very limited:
- You can't control the knockdown time between risings.
- You can't add risings to the default three. They do give you a lot of time control on the risings.
- You can't separate the mixing cycle from the kneading cycle: it's all one cycle.
- When you turn off the preheat cycle, this only affects the built-in programs and not the custom ones.
- And worst of all: you can't bake for more than 70 minutes. This is utterly ridiculous. I'm sure this is a "safety feature" but it means you can't correct for the pathetic lack of crust formation or have larger recipes and so forth. This is almost a killer limitation in my opinion.
For those other reviewers that are having issues with rising, I've determined that the machine is very sensitive to the amount, type, and quality of yeast. If you *exactly* follow the manufacturers instuctions with respect to yeast and use fresh yeast, it should work okay. This means you must use rapid rise yeast with the Quick programs and active dry yeast with the longer standard programs. Even using Fleischmann's instead of Red Star made a difference. The Breadman was pretty much indifferent to yeast variations.
At this point I'm done with bread machines. They are a failed technology. In fact, teflon is a dangerous and substandard technology.
All you have to do is search for teflon (Polytetrafluoroethylene) and toxic to come up with some pretty alarming data on this noxious substance. The manufacturing process results in significant environmental contamination.
A direct consumer health risk due to toxic outgassing occurs when teflon is exposed to temperatures above 500 degrees (eg: frying pans). Perhaps bread machines are not that risky given the lower temps involved in baking and the fact that wet dough will keep the average pan temperature pretty low, but if you know anything about toxicity you will realize that it is always a sliding scale: there will be some outgassing at lower temperatures. Imagine low levels of toxic gas released into your homemade bread. I've thought about this, but there's no way to make a bread machine without teflon -- going from mixing dough to baking requires teflon, there is just no other viable solution.
I love making bread every day and I'm going to miss this activity but at this point the manufacturing defects and use of teflon mean I have to give up on this technology. It's back to the occasional hand-made loaf -- it's the only rational and healthy solution.

This machine is incredibly quiet, and makes suberb bread. My only suggestion - the recipe book could be more extensive. I have used my other recipes in it and everything including the heaviest 100% whole wheat, oatmeal sesame and raisin bread have turned out perfectly!

Okay, we haven't really messed to much with making bread in this machine. But we use it like twice a week to make pizza dough (the recipe in the booklet is yummy, try the one with beer it's good too) and we make a Challah recipe that I found online we like. Good Challah needs to be braided so we take it out to be cooked in the oven and the recipe makes 2 loaves.
We like wheat bread and well it hasn't come out very well but we didn't follow the recipe cause we hadn't found the wheat gluten it calls for (we now have it). When we do make bread we have to eat it fast cause it does go bad really fast but there are only 2 of us so...
You do need to keep an eye out for the amount of flour cause depending on where you live you will have to add less or more depending on the time of year but that can't be helped even if you were using a kitchen aid or something. Just measure and go for it.
Great machine. Kinda larger on the kitchen appliance side of things but overall a I would recommend it to a friend. Cause it's saves us so much time and $$ on the stuff we do use it for (challah at the store is like 5.00 a loaf and we get two and pizza like way expensive to order in and we make a better pie ourselves).

I love my new Zojirushi. It is very easy to use. With the two blade mixing process, ingredients mix so well. The blades fit so well and have always stayed in the pan when removing the bread. There is no big hole left in bread, just a thin slot. Nice! Our main use is to bake gluten-free bread since my husband is a Celiac. The personal program feature works so well for this. The bread comes out perfect every time. This is our first Zojirushi and we will stick with this brand whenever a new machine is needed.

For the most part, I have been very pleased with this new bread maker. The first three loaves I made had good texture and lasted well for a week. However, the one loaf I tried by assembling the ingredients ahead of time and starting the timer to finish 13 hours later was a total failure. It never did rise and was a pile of hard rocks in the bottom of the bread machine! Other than that one failure, I have been quite satisfied with it, much moreso than the Breadman I tried first, but not as much as the DAK I used to have. The Zojirushi makes a perfectly shaped loaf, has directions that are clear and easy to follow, and gives many extra options like making jam, etc. which I have not tried yet.

I've been using this for about six months now; I previously had the older vertical-style Zojirushi maker. Some observations:
Unlike as is mentioned in many of the notes here, my loaves come out too dark even on the lightest setting, particularly the 1.5 lb. ones. I tried programming it for a shorter baking phase, but it appears that the machine is too smart for this; it raises the baking temperature so that the loaf comes out even browner.
Other than that, I use it mostly for mixing dough. The features I bought it for (programmable phases, loaf shape) work fine. But I do wish they supported programmable rising temperatures. When the dough comes out of the maker, it's been rising at 100F and won't continue rising satisfactorily at a lower temperature, so I have to put it in a makeshift proofing box (my oven, preheated for one minute.) This does not work for French bread, which wants to rise at 72F for many hours to develop flavor.
I may also have found a solution to the lopsided loaf problem: I adjust the paddles so they are facing each other before I add the ingredients. It doesn't come out perfect but seems better to me. Does this work for anyone else?

I have always baked bread by hand and never owned a bread machine before this one. There are times when the loaf is lighter on top than I'd like. The bread does bake under the paddles but following the directions for cleaning and soaking a few moments seems to remedy for me. The paddles are a bit tricky to get off sometimes but nothing major. I've had no trouble with the non-stick surface as of yet. As to the browning of the bread - using this recipe I found online I get a great loaf every time. I add them in the order the manual says: 1 cup + 1 tbs. water, 1 large egg beaten, 4 1/2 tbs. vegetable oil, 1/4 cup sugar, 1 1/2 tsp. salt, 1 tbs. rapid rise yeast. I use the quick cycle and the medium crust. Other recipes yield various results but this one is a staple in our house. Just my two cents worth, all in all I really like this machine for when I don't feel like making bread by hand.

First I just wanted to note that I ordered this machine from Amazon because of their price and service . . . and to my delight my order was delivered way ahead of the estimated delivery date.
I couldn't wait to try the Zojirushi BBCCX20 . . . I'd been using my Panasonic bread machine for 5 years . . . and from the first to the last loaf (except for some of my own errors with ingredients) everything was wonderful . . . there's really nothing like waking to the smell of fresh baked bread . . . and my Panasonic delivered every time.
When I moved last year I wasn't able to take my machine . . . and after reading all of the glowing Zojirushi reviews, I just was convinced that this should be my new machine. Man . . . was I disappointed. Compared to my older Panasonic, the finished loaf had a really difficult time releasing from the pan, and each 1.5 loaf I made was significantly lopsided . . . and worst of all, with each basic white loaf I made, I just couldn't get the top of the bread to brown properly . . . the side and bottom crust were fine and colored nicely . . . but the top gets almost no color . . . and actually has a sickly/unbaked appearance. The machine operated easily and correctly, the bread tasted fine but the appearance was horrible and unappealing. I'm assuming that the difficult release of the bread from the pan,the lopsided top, the dough baked UNDER the paddles, and the inabilty to brown the top of the loaf are significant design flaws . . . and wish more reviewers had commented on these problems . . . Well . . . that's my two cents . . . (added 6-20-06) I just want to add an updated closing note to my review. I just received my new order this afternoon . . . the Panasonic SD-YD250 Automatic Bread Maker . Within a few minutes of the delivery, I began baking bread again . . . Four hours later my first loaf from the new machine was ready . . . and just as I had hoped . . . really perfect . . . perfect color, perfect texture and the small loaf really has the appearance of bread you'd see on shelves at the bakery. I'm not the kind of person who puts out consumer alerts . . . but I'm so pleased with the Panasonic over the Zojirushi BBCCX20 that I'm glad to have posted this review . . . Again . . . just my two cents . . .

I worked with my Hamilton Beach Breadmaker for years, it finally burned out last week. It made good bread and never had any problems, simple to use. I researched breadmachines and kept coming back to the Zojirushi. I bit the bullet and bought it.
Talk about fast delivery! I ordered this on Monday mid-morning and it came on a Thursday mid-morning. I was thrilled! I sat down and read the instructions and they are simple to read and have good diagrams. I couldn't wait to make my first loaf of bread.
First of all, it is QUIET plus a powerful kneader with two paddles. We made a white loaf of bread on the quick cycle. Amazing, simply amazing! Nice high rise and crust. At first, I couldn't get the bread out and knew that reading the book to wait a few minutes and it literally dropped right out.
We had warm bread slices with melting butter and salami, well, not the most innovative sandwich but it was a pretty wonderful sandwich. I love the long loaf and the light texture of the bread.
We are sold on this machine. While I was happy with my Hamilton Beach which had to be 10 years old, this machine was a replacement that I am thrilled to have.
Sure, an investment but knowing what I know now, I wouldn't hesitate.

This is my third bread machine. The first one died years ago. I recently gave myself permission to buy the top-of-the-line bread machine, even though my aging current one still works.
That was before I learned that "top of the line" meant this $200 critter! But, based on the outstanding reviews here, I followed through.
The thing I did when I got the machine told me everything. I made my first loaf with the same bread recipe I used most often in my other machine.
Wow.
The finished product clearly showed how brilliantly designed this machine is. Every feature--the preheating, two blades, true loaf-shaped pan, third rise time--came together to produce a loaf of bread that was in a completely different class in texture from the one my previous machine produced. It was really surprising and my family was delighted.
I have made a number of different recipes since then (I've had it for over four months) and the results have nearly always been wonderful. It's easy to use and easy to clean and as a result we use it far more often than any bread machine we've had before it.
I haven't tried to produce anything other than loaves of bread and probably won't, with the possible exception of pizza dough. I'll leave that to the bread machine wizards.
So, what I can offer you is this perspective. If all of the extra things you can do on this model are meaningful to you, then great, but you won't need them to justify the expense. In my opinion, the basic core function of the machine--making a loaf of bread--is in a class by itself.

Wonderful machine. I have had two other bread makers and rarely used them. My daughter was diaganosed with Celiac Disease and I was told to buy this machine. I was told it ws the best. They were so right! From the first loaf we loved it. We make pizza dough, bread etc. Easy to use, mixes, and bakes to perfection. Easy to adjust the settings but so far haven't really needed to use anything but the basic cycle except for when making pizza dough.

I bake bread in the oven using stone and KitchenAid mixer. Due to busy schedule I decided to purchase Bread machine to relieve some of the burden.
So far I baked white American sandwich loaf, which is way better than the ones you would buy at your local supermarket.
I also baked more rustic bread such as oatmeal bread and It was somewhat disappointing. The crust was not thick and crunchy as it should be.
This machine excels at kneading a small amount of dough and will keep constant temperature of 82 degrees. However it lacks in baking department. it will only produce American white loaf crust and leaves a big hole in the bottom (due to paddle attachement).
Next model should have steam injection feature for more crusty loaf. I recommend this machine to people who are ok with sandwich loaf. But if you want high quality rustic loaf, you should get a stand mixer and a big bucket with lead for proofing

I received the bread machine as a Christmas gift and I love all of its features -- but I am unhappy that the nonstick coating has started to wear off -- particularly at the four "ribs" in the bread tray. This wear is particularly troubling because of all the recent news about nonstick coatings being phased out in the next ten years due to health concerns. That's my only complaint.

About 2 years ago, I began researching bread machines and wheat grinders as I wanted to provide a healthier alternative to my family. After much research I decided on the Zo and must say we are COMPLETELY satisfied. As you may know, true whole wheat (not the stuff you buy in the store) can be very hard on bread machines. After a year the Zo has turned out perfect loaf after perfect loaf.
For those who rated this machine very low, they must not understand the sensitivity of bread making. It is all about chemistry and must be done with much caution and one MUST follow directions. Blame their 'bombed loaves' on 'user error' rather than 'machine error."

For those who say the Zo burns their loaves - decreaese your sugar or honey content, that is what causes the burn.

I wanted a bread machine so that I wouldn't have to go to the store every week--we eat toast every morning. I love my bread machine! It's so easy to make good bread--I just place all the ingredients in it and set the controls and two hours later I have fresh bread. The other bonus is that I can control the ingredients going into the bread. So far, every loaf came out pretty good. I would have given it five stars but the one complaint I have is taking the beaters out of the bread. Sometimes it's very difficult getting the bread out of the pan and then having to dig the beaters out of your bread (easiest to do when the bread is hot).

This bread machine is so right on. The whole house will smell good and you will use it often. The down side- the pan on this machine does loose a little coating. I am a health nut and am not too worried by this as it is minor. I have been really careful washing the pan, but still a little coating loss! I wish this did not happen!!!! But the machine is overwhelmingly worth its price, but Zojirushi should improve their pan! Bread 5 stars, pan 4.3 stars.
Also for really good bread purchase The Bread Lover's Bread Machine Cookbook by Beth Hensperger. I tried the Zojirushi cookbook that comes with the product, and the bread was OK, but the dream was not realized. This book has great recipes and tells you about things that make the bread good, if you like and can eat wheat, like vital wheat gluten available in most stores.

I used for a few times an Oster bread machine, from a friend, with good results, but it came time for me to get my own one. I researched and researched and I got this Zojirushi one... I am very impressed!
After a few trials (that were all good breads) I got the gist of it and made my own adjustments using the Home Made feature (the 3 Memory settings). Great bread all the time.
I feel sorry for the people out there that did not have a good experience with this Zo, but I would recommend it in a blink.
As some people complained, at the medium/light crust setting, the Zo would not bake the top as brown as I hoped, but I just set it on dark crust and the bread came out perfectly. We really need to try the different settings and kind of play with the ingredients for a few times in order to get our own "perfect bread".
It's just I very good bread machine! I hope it will last for a long time...

I'll agree that there is a certain aesthetic pleasure in kneading one's own bread. But, when you want to provide daily bread--healthfully--for a family day in and day out, you need this machine! Whole-grain loaves rise light, high, and delicious. I've found it to be very easy to use, and the clean-up is VERY easy. I haven't experienced any problems at all.

I had a zojirushi bread maker for about 10 years. It was one of the first bread machines that they made and it was fine, but it got old and needed to be replaced, so obviously we looked at the same brand and researched the BBCCX20 pretty thoroughly. I looked around and finally bought it through Amazon. It was here in 2 days and I have used it so much already. I love it. I makes wonderful bread and dough. I have used some of the recipes in the manual and I have uses some of my old tried and true recipes. They have all been good in my new machine. I love it and recommend it highly.
