haven't tried it with soft cheese, but i have used it extensively and it has performed very well for a low cost slicer. i agree that the screw holding the blade could be made a little stronger, but if you don't over tighten it and pay attention when loosening it you should have no problem.

I purchased this slicer less than a year ago. My main reason was that I had been tired of using an electric knife for slicing roasts.
What I liked about the 610 was the ease in thickness adjustment with a knob turn on the fly. The quality of Chef's Choice is second to none as I had found out with other slicers that were predominately made of plastic.
Slicing onions and tomatoes has now become a norm in the house for sandwiches, which I do in a group and place them in Tupperware.
The one major con with this product is the blade retaining screw. When you need to clean the blade (after every use) you need to turn the tab, which is plastic, clockwise in order to unscrew the retaining screw. This is nearly impossible due to the torque versus the tab. The tab pops off, leaving one to scratch their head on how to get the blade off safely.
After contacting Chefs Choice they told me to stick a butter knife in the middle and turn, which I did and the screw released. I do think that they can improve this with maintaining the screw threads in plastic (prevent any type of rust from sealing it over time) but use an aluminum cap to twist, or just going to a stainless steel retainer. Anything would be better but the current one. That is why I am giving four stars opposed to five.
Otherwise it's a great investment.

I works fine for a home meat slicer, my only concern is that plastic screw that holds the blade on, it feels like it is going to break everytime I twist it off for cleaning.

This slicer seems to be great quality except for the plastic piece that pushes the meat towards the blade, it is really light and moves around a lot and is designed to not touch the blade but it can if you aren't careful and don't hold it steady, I just think it would be way better if that piece were made of steel or something heavier, then it wouldn't wobble as much and the slicer would probably work perfectly.

I love this slicer! I was going to buy one at a linen store, luckily they were out of them. After reading the reviews here, I went with the Chef's Choice instead, and it is great! Vey easy to clean, and very well made. I have used it for meats, cheeses and vegetables. Very glad I got it - it makes cooking lots easier! And I hate to cook.

All the other positive reviews are dead on. If you are looking for an electric food slicer then this is the one you want. As stated in other reviews, this machine is well constructed and cleans up easy. Despite it's smaller than commercial-grade size, it slices the same sized meats, cheeses, vegetables, etc. as the bigger ones do. It doesn't slice as fast as the commercial grade units do but there has to be a trade-off somewhere, otherwise you will be spending several hundred dollars more. Also, the machine is compact enough that it should store easy. I'm very happy with this item.

I love this meat slicer. I buy all my meat by the slab including whole sides of beef. I am able to make one inch steaks and thinly sliced deli meats. It is very sturdy and makes my life easier.

This slicer seemed like a bargain at $100. It looks like it's all steel and the sales pitch hypes the abundance of metal on this device. However, it has plenty of plastic and seems somewhat flimsy. Also, the motor feels totally week. Slicing hard bread seems to strain the motor. It seems to me that this slicer may have a place for you but any hard slicing jobs just seem too much. Also, there was a little plastic knob to turn in case you wanted to remove the blade. Our knob either came broken or broke when we tried to turn it. Basically, unless you are buying professional grade you get alot of plastic and a week motor. There are no detours. I almost wonder if my dads hand slicer would work better than these electric slicer. Oh how I long for the days when things were built to last. But hey we all like the thrill of buying new junk and China obliges.

I use this slicer once a month for slicing beef sticks and chuncks of cheese bought at the local Sam's Club. I just love it. Easy to use, easy to clean.

I absolutely love this slicer. I make my own bread, and originally used it to slice that...the serrated blade it comes with works wonders on bread. It will also cut meats, but not nearly as nicely as the optional non-serrated blade. I find it easy to clean and maintain. For the money it is a great slicer. Of course, as with anything, it takes some practice to learn how to 'guide' the bread/meat from the slicer so it doesn't get stuck, but this is common with any slicer, inexpensive or not.

Bought this slicer to suffice until I found a better replacement for my German model. I am in no hurry now. This thing gets the job done. It's relatively easy to clean (they are all a pain) definitely more so than my last one. Dollar to value I humbly submit tis the best buy. I liked the design even better than the higher priced models which I was prepared to pay. The only reason it got 4 out of 5 stars is that the center lock is flimsy plastic and although mine hasn't broke I can see the future. My last model did have a better center blade lock about the size of a 50 cent piece with thumb grooves and made of hard plastic. Probably easy to improvise a replacement but I am being extra cautious with it.

While I may not be a professional cook (far from it, actually) this item has been a wonderful addition to my array of cooking devices. This electric food slicer is able to slice just about anything into just about any size. Also, if one ever needs to, say, slice a zucchini extremely thin, on a relatively frequent basis, then this is the way to go.
Using the 610 Premium Electric Food Slicer is a snap. All you do is assemble, place the food on the tray, and slide it over the spinning blade. Also, clean-up is just as easy. You disassemble, wash lightly but thoroughly, dry, then reassemble. Also, unless you do something stupid, it is near impossible to cut yourself using this device.
If you aren't going to use it often, then I would recommend not buying an electric slicer, but just cutting the food with a knife instead. However, if you are going to use it on a regular basis, then there is no slicer I would recommend more from a financial and quality standpoint.

Not very happy with this product. I am still debating on weather or not to return it. I found it very difficult trying to remove the blade and almost broke the the plastic trying to loosen it. I finally got a butter knife and ended up scratching the plastic trying to get it off to clean. Anything I have tried to slice always seems to bunch up near the bottom of the blade. I don't feel that it slices very even either. On a positive note once the blade is removed it is easy clean up.

I bought 2 of these items, one for myself and one for my brother. He makes a lot of jerky and said it works great. You just need to partially freeze the meat to get good control. I have sliced homemade bread (very thin and very neat), cheese and meat. Everything came out great. Clean-up takes a little time, but that will happen with any machine. I looked at a lot of deli slicers and compared features and prices. This was by far the best deal. I think you will find it useful in your kitchen too.

I slice many whole pieces of Italian meats - Salami, Mortadela, and procuitto. This slicer is a basic, economical home slicer and does not perform anywhere close to a deli slicer. The unit itself it to small to take a large product and the blade runs to slow for doing a good job on hard cheese. The engine actually starts to smoke on the tough jobs. Additionally, it really can not achieve a super thin slice - it is just not that robust.
But, what do you expect for $100?? It does slice and for small products and a limited amount of slicing it can do the job.
If you want to slice larger pieces and/or achieve thin perfect slices - move to a bigger blade and more powerful engine.

No problem with its operation, my only complaint is the difficult and necessary cleaning after use. The manual recommends "wiping with damp sponge" after use. That is not adequate after slicing fatty meats. It really needs to be disassembled and cleaned, messily I might add, with soap and water. It was not designed for such cleanings.

What a great purchase. I reviewed the various models you had and am very pleased at the ease of use and excellent machine this turns out to be. I want to slice everything! It is wonderful for cold meats..a 3 star for hot. I use it to cut the hardest cheeses as well as soft turkey breast. I'm a Costco regular and now I can really take advantage of the bulk cheese and meat. Ham, Corned beef, Salami, rare roast beef right down to paper thin. I recommend this to anyone who is skilled at handling a knife. It has NO hand guard or handle to prevent someone from inadvertantly putting a hand against the blade and fileting their fingers so use with care and don't let kids use it...It's definitely not for the novice meat slicer.

To temper B. Feldman's review (the first in the list); I give this a good value. It does a good job of slicing for sure but Feldman caused me disappointment. I bought this with a whole prechuto in the refrigerator to slice and everybody knows prechuto needs sliced "paper thin" for sure. Contrary to Feldman's review, paper thin is at best a challenge with this slicer. I ended up with ham jerky; it's the best it can do, thin wise.
So if you don't need paper thin, this is the best value I found, does a great job and does clean up in a snap. I find that the fence isn't rigid enough to keep the tolerances of thinner slicing. So to be referring to it as anything like professional is over stated.
Don't let this review discourage your purchase for your kitchen unless your a prechuto fan; for that reach much deeper in your pockets. I just thought Feldman really over stated the machine.

I was in the restaurant equipment business for over 35 years and sold hundreds of comercial slicers such as Hobart, Globe etc. This is not a comercial machine but it thinks it is. It does a supurb job of slicing from paper thin to a thick slice of rye. I don't use it as often as I should, but it is relatively easy to clean and a great addition to any kitchen.

Bought the Chefs Choice 610 food slicer, then saw the Waring FS150 (similar but a Professional model with larger motor) for $30 less an hour later. Bought that one also with intent to look up reviews online and decide at home. After reading reviews (great reviews for Chefs Choice, awful reviews for the Waring) and instruction manuals on both (still can't believe you can't run the Waring for more than 10 minutes at a time and the poor design for cleanup) decided to keep the Chefs Choice. Used it to slice roast beef, swiss cheese and baked turkey breast. Worked extremely well on all and the unit is extremely easy to use. Cleanup took about 5 minutes total. Unit is a little larger than I would have liked, but all the food slicers have similar dimensions. Well worth the extra $30.

I got my Chef Choice Model 610 food slicer a couple weeks before Christmas in anticipation of making my Christmas dinner prep easier. And what a nice addition this food slicer was. It is easy to set up, easy to use, has adequate safety features and cleans up in a jiffy. Because I wanted to use it for large ham slicing.... I did order the Ham Slicing Blade extra from the factory which cost about $30 which I used to slice my Christmas ham instead of the serrated blade that comes with the product.
This is an excellent slicer.
